Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

Four 1/2-inch-thick, bone-in, pork chops (about 1-1/2 pounds), patted dry
Flour for dredging
2 large eggs
1 teaspoon kosher salt
Freshly ground black pepper
1 1/2 cups fresh sourdough bread crumbs
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/4 teaspoon dried basil
Extra-virgin olive oil for shallow frying
2 lemon wedges

Steps:

  • Put the flour in a shallow bowl or lipped plate. Break the eggs into another shallow bowl and whisk with the salt and pepper. In a third shallow bowl mix the breadcrumbs with herbs.
  • Bread the chops. Dredge a chop in the flour, shaking off the excess, then dip it into the eggs, and finally coat the meat evenly with the breadcrumbs. Set on a piece of waxed paper or baking sheet. Repeat with the remaining chops. Heat a large skillet over medium heat with enough oil to come halfway up the sides of the chops, about 1/4 cup. When the oil shimmers, add the chops and fry 3 to 4 minutes on each side, until golden brown and crispy. Drain on paper towels and serve immediately with lemon wedges.

Number Of Ingredients 8

6 pork chop cutlets
1 teaspoon garlic powder
1 teaspoon seasoning salt
¼ cup all-purpose flour

aluminum foil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 35m

Number Of Ingredients 8

4 large eggs
1 tablespoon plus 2 teaspoons Dijon mustard
1 tablespoon plus 2 teaspoons packed finely chopped fresh sage
8 bone-in pork chops (1 inch thick and 2 1/2 to 3 pounds total)
2 cups plain dried breadcrumbs
Coarse salt and ground pepper
1/4 cup (1/2 stick) unsalted butter, melted
1/4 cup vegetable oil

Steps:

  • In a medium bowl, whisk together eggs, mustard, and sage and let stand 15 minutes. Meanwhile, pound each pork chop (avoiding bone) between two pieces plastic wrap to a 1/4-inch thickness.
  • Spread breadcrumbs on a rimmed baking sheet and season with salt and pepper. Pour egg mixture onto another rimmed baking sheet. In batches, season pork chops with salt and pepper and coat in egg mixture. Gently shake to remove excess, then dredge in breadcrumbs, pressing to adhere. Freeze pork chops (see below).
  • To serve, heat broiler. Place a rimmed baking sheet in broiler to heat. For each frozen chop, combine 1 1/2 teaspoons melted butter and 1 1/2 teaspoons oil; brush on both sides. For each batch of two, place chops on sheet and broil until both sides are deep golden brown, 10 to 15 minutes, flipping halfway through.

Tips:

  • To ensure the pork chops are cooked evenly, use a meat thermometer to check the internal temperature. It should read 145 degrees Fahrenheit (63 degrees Celsius) for medium-rare or 160 degrees Fahrenheit (71 degrees Celsius) for medium.
  • If you don't have panko breadcrumbs, you can use regular breadcrumbs or crushed cornflakes.
  • For a crispy coating, make sure the pork chops are completely dry before breading them.
  • To prevent the breading from falling off, press it firmly onto the pork chops.
  • If you don't have a meat mallet, you can use a rolling pin to flatten the pork chops.
  • You can use any type of cooking oil to fry the pork chops, but olive oil or canola oil are good choices.
  • To prevent the pork chops from sticking to the pan, make sure the oil is hot before adding them.
  • Don't overcrowd the pan when frying the pork chops. This will cause them to steam instead of fry.
  • Serve the pork chops immediately with your favorite sides.

Conclusion:

Ina Garten's breaded pork chops are a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are tender and juicy, and the breading is crispy and flavorful. This recipe is sure to be a hit with your family and friends.
