Time 30m

Yield 4 pizzas

Number Of Ingredients 13

Cooking spray
1 ounce parmesan cheese (1/3 cup grated)
2 ounces part-skim mozzarella cheese
3/4 pound store-bought whole-wheat pizza dough, at room temperature
1 tablespoon cornmeal
3 tablespoons extra-virgin olive oil
1 cup part-skim ricotta cheese
Freshly ground pepper
1 small head radicchio
2 heads endive
1 cup grape tomatoes

1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 475 degrees F. Spray 2 baking sheets with cooking spray. Finely grate the parmesan and thinly slice the mozzarella.
  • Cut the pizza dough into 4 pieces. Sprinkle a work surface with the cornmeal and use a rolling pin and/or your hands to stretch each piece of dough into a rectangle about 5 by 11 inches; place 2 rectangles on each baking sheet.
  • Brush the dough with 1 tablespoon of the olive oil, then distribute 4 tablespoon-size dollops of the ricotta onto each rectangle. Scatter with the mozzarella slices, then sprinkle evenly with the grated parmesan and 1/4 teaspoon pepper.
  • Bake until the cheese is melted and the dough is browned, about 12 minutes.
  • While the pizzas are cooking, thinly slice the radicchio and endive and halve the tomatoes. Toss in a large bowl with the arugula, the remaining 2 tablespoons olive oil and the balsamic vinegar. Top each pizza with about 1 1/2 cups salad. Serve immediately.

Tricolore Chopped Salad image

Provided by Giada De Laurentiis

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 14

2 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
1/4 cup mascarpone cheese, at room temperature
1 teaspoon walnut oil
1/4 teaspoon kosher salt
Pinch of freshly ground black pepper
6 tablespoons crumbled gorgonzola cheese
1 small head radicchio, thinly shaved (about 2 cups)
3 small heads endive, thinly sliced (about 1 cup)
1/2 bunch Tuscan kale, thinly sliced (about 2 cups)
4 Medjool dates, pitted and chopped
1/2 cup walnuts, toasted and roughly chopped
8 thin slices prosciutto
Shaved gorgonzola cheese, for topping

Steps:

  • Make the dressing: In a medium bowl, whisk the vinegar, olive oil, mascarpone, walnut oil, salt and pepper. Using a rubber spatula, fold in the crumbled gorgonzola. Let the dressing sit at room temperature for 10 minutes to let the flavors mingle, or refrigerate until ready to use.
  • Make the salad: In a large bowl, combine the radicchio, endive, kale, dates and toasted walnuts. Add the dressing and toss gently until evenly coated. Ribbon the prosciutto on a serving platter and mound the salad on top. Top with shaved gorgonzola.
  • To make shaving the gorgonzola easier, freeze a piece of the cheese for at least 2 hours, then use a vegetable peeler to shave some over the salad.

TRICOLORE SALAD WITH ORANGES

Tricolore Salad with Oranges image

Provided by Ina Garten

Time 25m

Yield 8 servings

Number Of Ingredients 11

1 cup shallots, peeled, thinly sliced in rings, and separated (2 to 4 shallots)
2 tablespoons apple cider vinegar
1 large radicchio, halved, cored, and shredded like slaw (12 ounces)
1 large endive, halved lengthwise, cored, and sliced crosswise 1/2 inch thick (8 ounces)
3 ounces baby arugula
4 navel oranges, peeled and sliced in 1/4-inch-thick half-rounds
2/3 cup pitted Kalamata olives
1/2 cup freshly squeezed lemon juice (2 to 3 lemons)
1/2 teaspoon good Dijon mustard
Kosher salt and freshly ground black pepper
1/2 cup good olive oil

Steps:

  • Place the shallots in a small shallow bowl and pour the vinegar over them. Set aside for 10 minutes to macerate.
  • In a large shallow serving bowl, combine the radicchio, endive, arugula, oranges, and olives. Lift the shallots from the vinegar with a slotted spoon, sprinkle them on the salad, and toss lightly (discard the vinegar).
  • In a 1-cup glass measuring cup, whisk together the lemon juice, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil. Pour enough of the vinaigrette over the salad to moisten well. Sprinkle with one more teaspoon salt, toss well, and taste for seasonings. Serve at room temperature.

Tips:

  • Use a sharp knife to cut the vegetables for even and uniform pieces.
  • Choose ripe and flavorful vegetables for the best taste.
  • If you want a sweeter salad, use a sweeter variety of onion, such as a Vidalia onion.
  • For a more tangy salad, use a red onion or a shallot.
  • Add a pinch of salt and pepper to the vegetables before roasting to enhance their flavor.
  • Roast the vegetables until they are tender but still have a slight crunch.
  • Allow the vegetables to cool slightly before assembling the salad to prevent the lettuce from wilting.
  • Use a light and flavorful dressing to complement the vegetables, such as a vinaigrette or a lemon-herb dressing.
  • Top the salad with crumbled feta cheese, goat cheese, or Parmesan cheese for extra flavor and texture.
  • Serve the salad immediately or store it in the refrigerator for later.

Conclusion:

Ina Garten's Tri-Color Salad is a refreshing and flavorful salad that is perfect for any occasion. It is made with roasted vegetables, fresh lettuce, and a light dressing. The roasted vegetables add a sweet and smoky flavor to the salad, while the fresh lettuce provides a crisp and refreshing contrast. The dressing is light and flavorful, and it complements the vegetables perfectly. This salad is sure to be a hit at your next party or gathering.
