Time 1h50m

Number Of Ingredients 24

2 lb Lamb (leg or shoulder, cut into 2-inch pieces)
1 tbsp Oil (Cooking or Olive oil )
1 tbsp Ghee (or oil)
2 tbsp Garlic (4 large garlic cloves minced)
2 tbsp Ginger (3-inch fresh ginger grated)
3 cups Onions (red or brown finely chopped)
1 cup Tomatoes (chopped)
¾ cup Yogurt (Greek, plain)
1 tbsp Lemon juice
½ tsp Black pepper
1 tsp Kosher salt
2 Cinnamon stick
8 Cloves
8 Green cardamoms
2 Black cardamoms
3 Bay leaves
1 Mace ((optional))
2 tbsp Coriander powder
¾ tbsp Cumin powder
¼ tsp Turmeric powder
1 tbsp Cayenne (hot)
1 tbsp Paprika (sweet)
1 tbsp Fenugreek leaves ((optional))
½ tsp Garam masala powder

Steps:

  • In a Dutch oven or heavy bottom skillet, add the oil, ghee, and whole spices.Pro tip - if possible use a Dutch oven as it retains heat evenly and will cook without losing too much liquid. if not, use a heavy bottom skillet with a tight lid.
  • Then, add onions and saute until caramelized, almost brown - about 10 minutes (see video).Pro tip - depending on the heat it may take 10 to 15 minutes to caramelize the onions. Do not cook on high as it will burn the onions not caramelize.
  • Next, add the ginger and garlic - saute for another minute. Add the lamb pieces, saute for 2 to 3 minutes until the lamb is no longer pink.Pro tip - ginger and garlic can burn easily so keep the heat on medium. Then turn the heat a little higher to sear the lamb on all sides.
  • Then, add the ground spices and chopped tomatoes. Saute for 2 to 3 minutes until fragrant.
  • Next, add the yogurt. Combine it then add 1/2 cup water. Season with salt, pepper, and lemon juice. Bring to a boil on medium-high heat.Pro tip - stir the yogurt separately in a small bowl to ensure there are no lumps before you add it to the lamb otherwise you will have lumps in the curry.
  • Continue to simmer it on the stovetop on medium-low heat stirring frequently until meat is cooked through and becomes fork-tender - about 1 to 1 ½ hour adding water if necessary. Pro tip - Always ensure you have enough water so the meat has enough moisture to cook. If necessary add ¼ to ½ cup more.
  • When cooked to fork-tender, taste and adjust seasoning. Adjust gravy by adding a bit more water depending on how you going to serve it.Pro tip - If you serve it with chapati, naan, or roti - keep it thick. If you serve with rice, add a little water to make a gravy.
  • Garnish with fresh cilantro or parsley.

INDIAN LAMB-AND-EGGPLANT NAPOLEON

Indian Lamb-And-Eggplant Napoleon image

Provided by Florence Fabricant

Categories     dinner, lunch, appetizer, main course

Time 1h30m

Yield Four servings

Number Of Ingredients 14

1 eggplant, about 1 1/2 pounds
Salt to taste
2 tablespoons, plus 1 1/2 cups, vegetable oil
1 teaspoon black mustard seeds
1 1/2 teaspoons cumin seeds
2 medium-size onions, chopped
1 small hot green chili, seeded and minced
3/4 pound lean ground lamb
3 medium-size ripe tomatoes, peeled and chopped
Cayenne pepper to taste
1 slice peeled fresh ginger, about 3/4-inch thick, finely minced
1 small bunch coriander, minced
8 ounces plain yogurt
8 Indian pappadums (available at most specialty markets)

Steps:

  • Dice the eggplant, sprinkle it with salt and set it aside for 30 minutes.
  • Meanwhile, heat the 2 tablespoons of oil in a large, heavy skillet over medium-high heat. Add the mustard seeds and cumin seeds. When they start to smell aromatic and pop, about 1 to 2 minutes, add the onions. Saute until the onions are tender, about 5 minutes, then add the chili. Stir in the lamb. Continue to saute until the lamb has lost its red color and is finely broken up, about 3 to 4 minutes. Remove the skillet from the heat.
  • Drain and rinse the eggplant. Pat the pieces dry on paper towels. Reheat the lamb mixture in the skillet, add 1 more tablespoon of the oil and add the eggplant. Cook, stirring, until the eggplant has lost its dryness, about 10 minutes. Stir in the tomatoes. Cover and simmer until the eggplant is tender, about 20 minutes.
  • Season to taste with salt and cayenne pepper and set aside until ready to serve.
  • Combine the ginger, coriander and yogurt and set aside.
  • Heat the remaining oil in a wok or skillet. Add one of the pappadums. As soon as it begins to curl, about 15 to 20 seconds, turn it over using tongs or chopsticks. Flatten it in the pan and cook another few seconds. It should not darken. Drain on paper towels and repeat with the remaining pappadums.
  • To assemble, reheat the eggplant and lamb mixture. Place a pappadum on each of 4 plates, top with a quarter of the lamb mixture, then cover with another pappadum. Spoon some of the yogurt mixture on top and serve with steamed rice, if desired.

Tips:

  • Choose high-quality lamb. Look for lamb that is fresh, well-marbled, and has a bright red color. Avoid lamb that is dark or has an off odor.
  • Use a variety of spices. Indian lamb dishes typically use a variety of spices, such as cumin, coriander, turmeric, and chili powder. Experiment with different combinations of spices to find a flavor profile that you enjoy.
  • Don't be afraid to use yogurt. Yogurt is a common ingredient in Indian lamb dishes. It helps to tenderize the lamb and adds a creamy, tangy flavor.
  • Cook the lamb slowly. Lamb is a tough meat, so it needs to be cooked slowly in order to become tender. Braising or stewing are good methods for cooking lamb.
  • Serve with rice or naan. Indian lamb dishes are traditionally served with rice or naan. Rice is a good choice for soaking up the flavorful sauce, while naan can be used to scoop up the lamb and sauce.

Conclusion:

Indian lamb dishes are a delicious and flavorful way to enjoy lamb. With a variety of spices and cooking methods to choose from, there is an Indian lamb dish to suit every taste. So next time you're looking for a new and exciting way to cook lamb, give one of these recipes a try.
