These are so quick and easy. I make them after dinner that way they are nice and gooey. You will need 4 small ramekins. My oven is weird so I cook for maybe 9 minutes I check often to mke sure they are still jiggly. After remving from oven I run a knife around the edges before unmolding. I use a combination of dark and semi sweet chocolate

Yield 4 serving(s)

Number Of Ingredients 7

4 ounces bittersweet chocolate, chopped
1/2 cup unsalted butter
2 large eggs
2 large egg yolks
1/4 cup sugar
3 tablespoons all-purpose flour
confectioners' sugar

Steps:

  • Position rack in middle of oven and preheat to 450 degrees F. Butter and flour four 4-ounce ramekins.
  • Melt chocolate with butter. Remove from heat. Beat eggs, yolks and sugar with an electric mixer on high speed in a deep bowl, 8 minutes, until thick and pale. Whisk chocolate mixture into egg mixture. Whisk in flour.

Time 37m

Yield 6 servings

Number Of Ingredients 6

7 1/2 ounces imported bittersweet chocolate (preferably El Rey or Valrhona), coarsely chopped
11 tablespoons unsalted butter, cut in large pieces
3 large eggs
3 large egg yolks
1/4 cup plus 2 tablespoons white granulated sugar
5 tablespoons all-purpose flour, sifted

Steps:

  • Preheat the oven to 325 degrees.
  • Butter and flour six 6-ounce custard cups.
  • Place 5 1/2 ounces of the chocolate and the butter in a metal bowl, and set it over a pan of simmering water. Stir until melted and smooth. Cool slightly.
  • Using a standard electric mixer with the whisk attachment, beat the eggs, yolks and sugar at medium-high speed until they are pale and thick, about 10 minutes.
  • Reduce the speed, and gradually mix in the flour.
  • Add the chocolate mixture to the flour mixture, and continue to beat until thick and glossy, about 5 minutes.
  • Divide half of the mixture among the prepared custard cups. Divide the remaining 2 ounces of coarsely chopped chocolate among them, placing the chunks in the very center of the chocolate mixture (there should be about 1 tablespoon of chopped chocolate per custard cup). Then top with the rest of the chocolate batter.
  • Bake until the cake is set around the edges but the center jiggles slightly when the cup is moved, about 12 minutes. Cool slightly (no more than 5 minutes).
  • Run a sharp knife around the edges of the cups. Turn the cakes out onto plates, and serve.

There are a few molten lava cake recipes out there, but in my (and my husband's) opinion, this one is the best. It is terribly easy and I often make these on a weeknight as a special treat for my family. I originally got the recipe from watching Paula Deen but made a bit of a change to suit our family's tastebuds.

½ cup butter, cut into 8 pieces
6 ½ (1 ounce) squares semisweet chocolate, finely chopped
3 eggs, room temperature
⅓ cup white sugar
4 teaspoons unsweetened cocoa powder
2 tablespoons all-purpose flour
1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease and flour four 6-ounce ramekins.
  • Place chocolate and butter in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Combine eggs and sugar in a large bowl; beat with an electric mixer until pale and thick, about 5 minutes. Mix in melted chocolate, cocoa powder, and flour until combined. Pour batter into the prepared ramekins and place on a baking tray.
  • Bake in the preheated oven until the sides are set but the middle is still jiggly, 10 to 13 minutes. Let cool for 5 minutes before serving.

Tips:

  • Use high-quality chocolate for the best flavor. A chocolate with a cocoa content of at least 60% is recommended.
  • Make sure the butter and chocolate are melted smoothly. If the chocolate is not melted smoothly, it will not mix properly with the other ingredients and the cakes will not be as smooth.
  • Do not overmix the batter. Overmixing the batter will make the cakes tough.
  • Chill the batter for at least 30 minutes before baking. This will help the cakes to set properly.
  • Bake the cakes for the correct amount of time. If the cakes are overbaked, they will be dry and crumbly. If the cakes are underbaked, they will be gooey and runny.
  • Let the cakes cool for a few minutes before serving. This will help to prevent the lava from spilling out.
  • Serve the cakes with ice cream, whipped cream, or berries.

Conclusion:

Molten lava cakes are a delicious and elegant dessert that is perfect for any occasion. With a few simple tips, you can make perfect molten lava cakes at home. So next time you are looking for a special dessert to impress your friends or family, give molten lava cakes a try.
