CHEDDAR WHISKEY FONDUE

Cheddar Whiskey Fondue image

From about.com. We add cayenne to ours. It really works best if you have an actual fondue pot! :) Don't skip the extra sharp cheddar. It will have a blander flavor without it!

Provided by SarahBeth

Categories     Cheese

Time 20m

Yield 1 fondue, 4-6 serving(s)

Number Of Ingredients 7

1 cup minced sweet onion
1 tablespoon butter
1 cup milk
1 lb grated extra-sharp cheddar cheese
1 tablespoon cornstarch
1/4 cup whiskey
cubes of rye and onion bread for dippers

Steps:

  • In a heavy saucepan, gently saute the onions in the butter until soft and translucent. Add milk and bring to a simmer. Stir in cheddar cheese until melted and smooth.
  • Whisk together cornstarch and whiskey until smooth. While constantly stirring, slowly pour whiskey mixture into cheese mixture and continue to cook until thickened.
  • Pour cheddar whiskey fondue into a fondue pot or heat-proof bowl. Serve with rye or onion bread cubes as dippers.

Tips for the Best Irish Cheddar Fondue:

  • Choose high-quality ingredients: Use a good quality Irish cheddar cheese, a flavorful stout, and a smooth Irish whiskey. These ingredients will make all the difference in the taste of your fondue.
  • Shred your own cheese: Pre-shredded cheese contains additives that can prevent it from melting smoothly. For the best results, shred your own cheese using a sharp grater.
  • Cook the fondue slowly: Don't rush the cooking process. Fondue should be cooked slowly over low heat to prevent it from curdling.
  • Stir constantly: Stir the fondue constantly as it cooks to prevent it from sticking to the bottom of the pot.
  • Add the alcohol gradually: Add the stout and whiskey gradually, stirring constantly, until the fondue reaches the desired consistency.
  • Serve with a variety of dippers: Fondue is traditionally served with bread cubes, but you can also offer a variety of other dippers, such as vegetables, fruits, and meats.

Irish cheddar fondue is a delicious, cheesy, and boozy dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences.
