Iron Mike's Dark Rye Bread (Bread Machine) image

This makes a hearty, full flavored, wonderfully textured 1 1/2 lb. Dark Rye Bread. I had a hard time finding a Rye Bread recipe dark enough, so I combined 5 or 6 different ideas from lots of recipes to get my desired "strength" of Rye. There are a TON of ingredients, I know...but it's worth the effort. Enjoy!

Time 30m

Yield 1 beautiful loaf of Dark Rye bread

Number Of Ingredients 11

3 teaspoons dried yeast
2 cups bread flour
1 1/2 cups rye flour
1 1/2 teaspoons salt
2 tablespoons cocoa powder
1 teaspoon instant coffee powder
1 tablespoon caraway seed (more or less according to taste)
2 tablespoons oil
1 tablespoon golden syrup
1 tablespoon molasses
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, into the bread machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the bread machine, place it in a well greased bowl, cover and leave to rise in a warm place for about 1/2 an hour.
  • Then knead the dough lightly (while still in the bowl), for about 1 minute.
  • Turn out onto a lightly floured surface.
  • Either 'pat' the dough into a ball, flatten slightly and pinch all the edges underneath, and place in a round pan and dust with flour, OR 'pat' the dough into a 'log' shape and place in a loaf tin, for a rectangular or 'brick' shape.
  • Leave the dough to rise again, this time for about 1 hour or until it has risen to about double it's original size.
  • Bake at 200°C for about 30 minutes.

DARK RYE (PUMPERNICKEL) BREAD FOR THE BREAD MACHINE.

Dark Rye (Pumpernickel) Bread for the Bread Machine. image

We're having avocado sandwiches for supper tonight and I wanted a nice bread to go with them, so I made a loaf of Pumpernickel. I didn't have any caraway seeds, so added a handful of sesame and sunflower seeds as well as some oat flakes. I did this when the machine beeped 3 times. This will give the bread more fiber and taste. I made a 2 lb. loaf with a medium crust. and followed the recipe for my Bread man Bread Machine. I've listed the ingredients as I put them into the machine. The estimated time on the bread machine might vary for yours, my bread machine sets the time automatically.

Yield 12 slices, 12 serving(s)

Number Of Ingredients 12

1 1/2 cups warm water (100-115'F)
1 1/2 tablespoons vegetable oil
2 tablespoons molasses
1 1/2 teaspoons salt
1 1/2 cups rye flour
1 1/2 cups bread flour
1 cup whole wheat flour
1/3 cup vital wheat gluten
1/4 cup powdered milk (I used soy milk powder)
1 tablespoon caraway seed
1 tablespoon cocoa powder (I used unsweetened)
2 teaspoons active dry yeast (I used red star from the jar)

Steps:

  • Put all the ingredients in the order given or as per your bread maker's instructions. I think the order is pretty standard, just make sure the yeast is the last thing you add and that it doesn't touch the liquids.
  • I used the Whole Wheat Bread setting as suggested in the recipe.
  • When the bread is done, remove the bread pan and cool for a few minutes, then turn it out onto a metal rack to cool complete before cutting.
  • Bon Appetit!

GERMAN DARK RYE BREAD

German Dark Rye Bread image

This is one of 2 rye bread recipes I posted in answer to a request for a "marbled rye" bread. My suggestion for making the "marbled rye" is to knead the dark rye dough together with a "light" rye dough (Recipe # 43286), before shaping the loaves. (Of course that will make 4 loaves, since each recipe makes 2 loaves). This recipe makes a wonderful dark rye bread! (90 minute prep time includes rising time).

  • Proceed with the recipe as stated.

Tips:

  • Before starting, make sure you have all the necessary ingredients and equipment ready.
  • For the best results, use high-quality bread flour & rye flour. Freshly ground rye flour is recommended for optimal flavor.
  • If you don't have dark rye flour, you can use a combination of medium rye flour and a small amount of instant coffee or cocoa powder to achieve a similar flavor.
  • Feel free to customize the recipe to your taste by adding in your preferred mix-ins such as nuts, seeds, or dried fruits.
  • If your bread machine has a "dough" setting, use it to mix and knead the dough, then transfer it to a greased loaf pan and let it rise before baking in the oven.
  • For a crispier crust, brush the top of the loaf with water or egg wash before baking.
  • Make sure to let the bread cool completely before slicing and serving.
