Rigatoni With Italian Sausage, Peppers, and Onions image

I know it's difficult to think of making your own pasta sauce when you can get one easily out of a can - but believe me - this is worth it! It's not even difficult, and so impressive, fun, colorful and filling. You can even prepare the sauce in advance and rewarm it when you're ready to cook the pasta.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb hot Italian sausage link, grilled and coin-sliced
1 lb rigatoni pasta, uncooked
3 tablespoons olive oil
2 garlic cloves, minced
1 large red pepper, coarsely chopped
1 large green pepper, coarsely chopped
26 ounces of your favorite pasta sauce (I use a little more)
1 tablespoon fresh parsley, chopped
freshly grated parmesan cheese

Steps:

  • Cook rigatoni according to package directions; drain, keep warm and set aside.
  • Heat olive oil in large skillet; remove casing from sausage links and cut in coin-like slices.
  • Add to skillet and cook until no longer pink.
  • Add garlic and saute lightly for about 30 seconds.
  • Add peppers and cook until crisp-tender.
  • Add pasta sauce with peppers and heat until warm.
  • Add the rigatoni or serve separately.
  • Top with fresh parsley and parmesan cheese.

Helpful Cooking Hacks and Tricks:

  • Use fresh ingredients when possible, and purchase them from a reputable source.
  • Use a sharp, quality kitchen knives and cutting board.
  • Cook your ingredients in distinct batches to prevent overcrowding.
  • Avoid moving the food you're searing around in the pan until a crust has formed on the bottom; otherwise, the food might stick to the bottom of the pan.
  • While boiling the Rigatoni, ensure the water is well-salted, as if the water isn't salted, the Rigatoni won't be flavorful.
  • Make sure to cook the Rigatoni one minute shy of the time noted on the box, so you have some wiggle room to mix it with the rest of the ingredients.
  • If you don't have white wine on hand, you may use chicken stock in this recipe. The taste will not be quite as nuanced, but it will still be quite delicious.
  • If you don't have crushed tomatoes at hand, go ahead and use a combination of 28-oz diced tomatoes and tomato purée.
  • This time-saving recipe calls for just 30 minutes, but if you further reduce the cooking time, you may not allow enough time for the flavors to meld. However, adding a bit of time to allow the flavors to meld will result in a more nuanced dish.
  • Don't forget to add the fresh parsley; it is the final touch that will take this dish over the top.
