2 cups stale bread, cubed
1 lb ground turkey sausage (I picked an italian seasoned turkey sausage.)
10 eggs, beaten

ITALIAN PUMPKIN STRATA

Italian Pumpkin Strata image

"This vegetable-filled strata employs bread, cheese, milk, pumpkin and eggs to create a moist and delicious casserole you can cut into squares or wedges and serve with a platter of fresh fruit for a smashing brunch!"

Provided by Libby's® Pumpkin

Yield 12

Number Of Ingredients 16

1 tablespoon vegetable oil
1 pound sweet Italian sausage
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
2 cloves garlic
1 (1 pound) loaf Italian bread, cut into 1 1/2 inch cubes
2 cups shredded mozzarella cheese
2 (12 fluid ounce) cans NESTLE® CARNATION® Evaporated Milk
1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
4 large eggs
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram

Steps:

  • PREHEAT oven to 350 degrees F. Grease 13 x 9-inch baking pan.
  • HEAT vegetable oil in large skillet over medium-high heat. Add sausage, onion, bell peppers and garlic. Cook, stirring to break up sausage, for 7 to 10 minutes or until sausage is no longer pink; drain.
  • COMBINE bread cubes, cheese and sausage mixture in large bowl. Beat evaporated milk, pumpkin, eggs, salt, pepper, oregano, basil and marjoram in medium bowl. Pour over bread mixture, pressing bread into milk mixture. Pour into prepared baking pan. Bake for 30 to 35 minutes or until set. Serve warm.

Tips:

  • Choose your bread wisely: A good strata starts with a sturdy bread that can hold up to the custard and fillings. This recipe uses sourdough bread, but you can also use French bread, Italian bread, or even croissants.
  • Don't overmix the custard: Overmixing the custard will make it tough. Just whisk the eggs, milk, and seasonings together until they are well combined.
  • Layer the strata carefully: Start with a layer of bread, then a layer of fillings, and then a layer of custard. Repeat these layers until you reach the top of the baking dish.
  • Bake the strata until it is golden brown and set: This will usually take about 45 minutes to an hour. You can check to see if the strata is done by inserting a toothpick into the center. If it comes out clean, the strata is done.
  • Let the strata cool for a few minutes before serving: This will help it to set and make it easier to slice.

Conclusion:

Italian strata is a delicious and versatile dish that can be served for breakfast, lunch, or dinner. It is a great way to use up leftover bread and fillings, and it is also a perfect dish for a crowd. With its rich flavors and cheesy goodness, this strata is sure to be a hit at your next gathering. Buon Appetito!
