ITALIAN-STYLE PORK CHOPS
An Italian-style version of pork chops was one of the first recipes I tried making in the early years of my marriage. I've changed it over the years to be healthier by reducing added oil and fat, and by adding in some vegetables. It works well served over hot rice. -Traci Hoppes, Spring Valley, California

NOT YO' MAMA'S ITALIAN STYLE PORK CHOPS
Just a little something I threw together in the crockpot. Goes nicely over cooked noodles or rice, or even better- with a nice loaf of crusty Italian bread to soak up the sauce. Some nice Chianti wine would be excellent with this!

Steps:
- Wash chops and pat dry with paper towels. Trim excess fat from meat.
- In a large skillet, heat the olive oil.
- Coat the pork chops in a mixture of flour, salt, garlic and onion powders, and Parmesan cheese. Lightly brown on both sides in the heated oil (YOUR PORKCHOPS SHOULD NOT BE COMPLETELY COOKED); drain chops on paper towels.
- Place the mushrooms, onion, and garlic in the bottom of your crock-pot; add the chops by laying them on top.
- In a large mixing bowl, combine the tomato sauce, whole tomatoes, wine or sherry, lemon juice, salt and spices (except the bay leaves). Give a good stir.
- Pour the tomato sauce mixture over the pork chops. Add bay leaves to crock-pot. Cover and cook on LOW for 7 - 9 hours (HIGH: 4 to 5 hours).
- 30 minutes before the cooking time is up, turn crock-pot to HIGH and arrange the green and yellow pepper rings on top of the pork chops. Cover and continue cooking for the last 30 minutes.
- Just before serving, top with mozzarella cheese. Serve with your favorite hot cooked pasta and a freshly tossed garden salad. Don't forget the warm and crusty Italian bread to dip into the delicious tomato sauce.
Tips:
- Choose the right pork chops: Look for bone-in, center-cut pork chops that are about 1 inch thick. These will cook evenly and stay juicy.
- Brine the pork chops: Brining the pork chops in a mixture of water, salt, and sugar helps to tenderize the meat and keep it moist. You can brine the pork chops for as little as 30 minutes or up to overnight.
- Use a flavorful marinade: A marinade adds flavor and moisture to the pork chops. You can use a variety of marinades, such as Italian dressing, olive oil and herbs, or yogurt and spices.
- Cook the pork chops over medium heat: Cooking the pork chops over medium heat helps to prevent them from drying out. Use a meat thermometer to ensure that the pork chops are cooked to an internal temperature of 145 degrees Fahrenheit.
- Let the pork chops rest before serving: Letting the pork chops rest for a few minutes before serving allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful chop.
Conclusion:
Italian-style pork chops are a delicious and easy-to-make dish that can be enjoyed by people of all ages. With a few simple tips, you can create a restaurant-quality meal in the comfort of your own home. The key to cooking perfect pork chops is to use high-quality ingredients, cook them over medium heat, and let them rest before serving. Experiment with different marinades and seasonings to find the flavor combination that you enjoy the most.
