4 teaspoons apple cider vinegar
Kosher salt and freshly ground black pepper
Two 20-ounce cans jackfruit in brine, rinsed and patted dry
2 teaspoon chili powder
2 tablespoons vegetable oil
3/4 cup barbecue sauce
1 to 2 tablespoons light brown sugar, optional
8 large potato buns

Steps:

  • Combine the coleslaw mix, cider vinegar, 1/2 teaspoon salt and several grinds of black pepper in a medium bowl. Cover with plastic wrap and refrigerate until ready to serve.
  • Combine the jackfruit with the chili powder and 1/2 teaspoon each salt and pepper in a large bowl. Heat 2 tablespoons oil in a large skillet over medium high heat until shimmering. Add the jackfruit and cook, tossing occasionally, until the spices are fragrant 2 to 3 minutes.

One 15-ounce can tomato sauce
1/2 cup vegan yellow mustard
1/2 cup firmly packed vegan dark brown sugar
1/3 cup vegan cane sugar
2 tablespoons apple cider vinegar
2 heaping teaspoons garlic powder
2 heaping teaspoons onion powder
2 teaspoons liquid smoke
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1 tablespoon canola oil
1 small onion, sliced (1 1/4 cups)
Two 14.1-ounce cans jackfruit, drained
12 slider buns
Dill pickle chips, for topping

Steps:

  • Make the smoky sweet BBQ sauce: Combine the tomato sauce, mustard, brown sugar, cane sugar, vinegar, garlic powder, onion powder, liquid smoke and smoked paprika in a small saucepan. Bring to a boil, then simmer until thickened, about 30 minutes. Set aside. Season to taste.
  • For the sliders: Heat the canola oil in a saucepan over medium-high heat. Add the onion and cook until it begins to brown, 3 to 4 minutes. Add the jackfruit and 1 1/2 cups of the Smoky Sweet BBQ sauce and bring to a boil. Stir well to combine, then cover and simmer for 20 minutes, stirring occasionally. Add water if the sauce becomes too thick.
  • After 20 minutes, remove the lid and shred the jackfruit with two forks. Increase the heat and cook until the jackfruit is well coated with BBQ sauce and heated throughout, another 3 to 4 minutes. Remove the pan from the heat. 1 medium onion, sliced

3 cups jackfruit, fresh or canned
2 teaspoons salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon chili powder

½ teaspoon cayenne pepper
1 teaspoon vegan worcestershire
1 teaspoon liquid smoke
2 cups vegetable stock
½ cup vegan bbq sauce

Steps:

  • Preheat your oven to 350ºF (180ºC).
  • Oil a large knife and cut the jackfruit in half.
  • NOTE: If using fresh jackfruit, line your work surface with plastic wrap
  • Carefully remove the core of the jackfruit by cutting into it at an angle.
  • Pull each fruit out and remove its seeds and outer coating. Rinse the fruit thoroughly then dry.
  • NOTE: You can save the seeds to roast.
  • Heat the oil over medium heat in a large pan or Dutch oven.
  • Add the onions and garlic, and cook until translucent.
  • Add the jackfruit, spices, Worcestershire, and liquid smoke. Stir to coat evenly.
  • Add the vegetable stock and bring to a simmer. Reduce heat, cover and simmer for 45 minutes, until the liquid is mostly absorbed and the fruit has broken down.
  • Spread the jackfruit on a prepared baking sheet.
  • Bake for 75 minutes, until the liquid has baked out and the jackfruit has a deeper brown color.
  • Pour the vegan barbecue sauce over the jackfruit.
  • Mix and return to the oven for 15 minutes.
  • Serve warm on vegan buns with vegan coleslaw.

1 tbsp vegetable oil
1 red onion, finely chopped
1 tsp ground cinnamon
1 tsp cumin seeds
2 tsp smoked paprika
2 tsp chipotle Tabasco
1 tbsp apple cider vinegar
4 tbsp BBQ sauce
200g can chopped tomato
2 x 400g cans young jackfruit in salted water

Steps:

  • Heat the oil in a frying pan and cook the onion until very soft, for around 10-12 mins. Add the cinnamon, cumin and paprika to the onions and cook for a further 2-3 mins. Next add the Tabasco, vinegar and bbq sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water. Leave to simmer gently, covered, for 30 mins stirring every 5-10 mins to help break down the jackfruit, then take the lid off and cook a further 10 minutes.
  • Once cooked, use a fork to make sure all of the jackfruit is well shredded. Check seasoning and add another tbsp of bbq sauce if necessary for extra stickiness.

  • Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour. Add the onion and cook for 2-3 minutes.
  • Add in the chopped jackfruit and water, reduce the heat to medium and cover the lid simmer until all water is evaporated, takes about 5 minutes.
