Time 1h

Yield 4 servings

Number Of Ingredients 16

1 pound beef tenderloin
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Kosher salt
1 tablespoon vegetable oil
1/2 cup shredded mozzarella
1/4 cup mascarpone
1/4 cup ricotta
1 teaspoon horseradish
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon smoked paprika
8 slices Italian bread (1/2-inch slices)
2 cups baby arugula
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the tenderloin dry with a paper towel. In a small bowl, mix together the coriander, cumin, cinnamon and 3/4 teaspoon salt. Rub the tenderloin with the vegetable oil, then sprinkle with the spice mixture.
  • Heat a large, oven-safe skillet over medium-high heat. Sear the tenderloin for 3 minutes; flip, and cook an additional 2 minutes. Transfer the skillet to the oven and cook 10 to 15 minutes more, until the tenderloin is medium-rare (125 degrees F on an instant-read thermometer). Remove to a cutting board and let rest 15 minutes.
  • Combine the mozzarella, mascarpone, ricotta, horseradish, mustard, Worcestershire and smoked paprika in a medium bowl.
  • Thinly slice the tenderloin. Spread 2 tablespoons of the cheese mixture on each bread slice. Divide the steak and arugula among half the bread slices, then form sandwiches with the remaining bread slices.
  • Heat the olive oil in a large skillet over medium heat (see Cook's Note). Place the sandwiches in the skillet and weigh them down with a foil-wrapped brick or a heavy lid. Cook for 2 minutes; flip, and cook an additional 2 minutes.

JACKIE KENNEDY'S BEEF STROGANOFF

Jackie Kennedy's Beef Stroganoff image

This is from a wonderful cookbook called "The First Ladies Cook Book". This book contains pictures of each President and First Lady, as well as their china, and is great fun just read. This recipe is (supposedly) from Jackie Kennedy and my husband enjoys telling people that I cook one of her recipes for him! It's fun to serve at dinner parties.

Time 2h30m

Yield 8 serving(s)

Number Of Ingredients 8

2 lbs beef sirloin
salt and pepper
6 tablespoons butter, divided
4 tablespoons flour
2 cups beef stock or 2 cups beef broth
1/2 cup sour cream
2 tablespoons tomato juice or 2 tablespoons tomato paste
4 tablespoons grated onions

Steps:

  • Cut beef into thin strips (it's easier if meat is partially frozen), sprinkle freely with salt and pepper, and let stand, covered, for 2 hours in a cool place.
  • Make a roux by blending flour with 3 T melted butter until mixture bubbles and is smooth.
  • Using a whisk, gradually blend in beef stock and cook until mixture begins to thicken.
  • Cook for 5 minutes, then add sour cream alternately with tomato juice or paste, stirring constantly.
  • Simmer very gently, without boiling, for 1 minute.
  • Brown beef in remaining 3 T butter with grated onion.
  • When the meat is browned, pour the meat, onion, and butter into the sauce.
  • Taste for seasoning and simmer very gently or cook in a double boiler over hot water for 20 minutes.
  • This is very good served over buttered noodles.

Tips:

  • Choose a high-quality beef tenderloin roast for this recipe, making sure it is well-trimmed and free of any large pieces of fat or silver skin.
  • Sear the beef tenderloin in a large skillet over high heat until it is browned on all sides. This will help to create a nice crust and lock in the flavor.
  • Transfer the beef tenderloin to a roasting pan and roast in a preheated oven until it reaches an internal temperature of 135 degrees Fahrenheit for medium-rare or 145 degrees Fahrenheit for medium.
  • While the beef tenderloin is roasting, make the mushroom sauce. Sauté mushrooms, shallots, and garlic in butter until they are softened. Add cognac and beef broth and simmer until the sauce is reduced by half.
  • Remove the beef tenderloin from the oven and let it rest for 10 minutes before slicing. This will help to keep the juices in the meat.
  • Serve the beef tenderloin with the mushroom sauce and your favorite sides, such as mashed potatoes, roasted vegetables, or asparagus.

Conclusion:

Jackie Kennedy's Royal Beef Tenderloin is an elegant and flavorful dish that is perfect for a special occasion dinner. The beef tenderloin is roasted to perfection and served with a rich and savory mushroom sauce. This dish is sure to impress your guests and leave them wanting more.
