2 1/2-3 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1 teaspoon vanilla
1 cup sugar
2 eggs
3 jalapenos, very finely diced (divided so you have 1 1/2peppers for dough and the other half for topping)
6 jalapeno seeds, finely chopped, almost to a mash

Steps:

  • Sift 2 1/2 cups flour, cream of tartar, baking soda and salt into a small bowl.
  • In a large mixing bowl, with an electric mixer, cream butter and vanilla, adding sugar slowly, beating until fluffy.
  • Add eggs one at a time and mix thoroughly.
  • Gradually add flour mixture 1 1/2 peppers and seeds and combine well. If dough seems sticky, gradually add remaining 1/2 cup flour.
  • Refrigerate dough at least 1 hour and up to overnight.
  • Be sure to cover with plastic wrap. Roll dough into balls about the size of walnuts.
  • Moisten bottom of glass with water, dip in sugar and press to even thickness.
  • Top with a few pieces of jalapeno pepper, press lightly into dough.
  • Bake at 375 degrees for about 10 to 12 minutes. Remove from pan and cool.

3 cups all-purpose flour
1 egg
2 tablespoons margarine
3/4 cup lukewarm water
1 teaspoon salt
2 1/2 pounds Idaho potatoes, washed and peeled
3 cups cold water
1 tablespoon salt
1/2 cup butter
1/2 cup chopped onion
2 tablespoons chopped jalapeno peppers
Freshly ground black pepper

Steps:

  • To make Pierogie Dough: Combine all ingredients and mix well. Knead dough on flat surface for approximately 5 to 7 minutes. Let dough rest for 30 minutes or refrigerate overnight; the dough can be kept in the refrigerator for up to 2 days.
  • Roll out dough into a thin sheet, approximately 1/4-inch thick. Then cut in circles: 2 inches for small pierogies and 3 1/2 inches for large pierogies. Fill circles with desired filling. Pinch the edges well and cook them in rapidly boiling water for approximately 10 minutes. Drain and serve immediately with butter. If you decide to store them, dip them in cold water, drain, and let them cool on a cookie sheet. When completely cool, store them in refrigerator.
  • To make Jalapeno Filling: Place potatoes in a saucepan and cover with cold water. Add salt, bring to a boil over high heat, and cook until potatoes are soft. When potatoes are done, melt the butter in a saucepan over medium heat. Add onion and saute until soft; you can continue cooking until onions are caramelized if you so desire. Drain the potatoes and mash them. Add the cooked onion and jalapeno and season with salt and pepper, to taste. Continue mashing until blended. Let filling cool. Use 1 tablespoon of filling to fill the circles of dough as directed above.

I know, I know, I thought the same thing when my mom told me we were having them Christmas Eve. I WAS WRONG!!!! THESE THINGS ARE FANTASTIC!!! She did cut the jalepenos to one. My wife doesn't like jalepenos or hot things-LOVED THESE!!! Really, give them a try. They also keep in the freezer-how convenient! I served the second half at my house 2 days later.

1 (8 ounce) can parmesan cheese
1/2 lb cream cheese
2 egg yolks
bread crumbs and sesame seeds
