JAMES BEARD BANANA BREAD
From James Beard Bread Book. One of the must have books. It's simply the best. I make muffins instead of bread, it's faster to make. The bread's not gummy and easier for my mum-in-law to eat. I grate up a little orange peel sometimes to be different.

JAMES BEARD BANANA BREAD
Steps:
- Preheat oven to 350. Sift flour soda and salt. Cream butter and gradually add sugar. Add eggs and bananas and blend thoroughly. Combine milk and lemon juice. Slowly fold in flour mixture alternately with milk. Bake in buttered 9x5 loaf pan for about 1 hour.
Tips:
- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with yellow peels that are speckled with brown.
- Don't overmix the batter: Overmixing can result in a tough, dense banana bread. Mix just until the ingredients are combined.
- Use a loaf pan that is at least 8x4 inches: This will ensure that your banana bread bakes evenly.
- Bake the banana bread at 350 degrees Fahrenheit for 50-60 minutes: Or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool completely before serving: This will help it to set and develop its full flavor.
Conclusion:
Banana bread is a delicious and easy-to-make treat that is perfect for any occasion. With its moist texture, sweet flavor, and nutty aroma, banana bread is sure to be a hit with everyone who tries it. So next time you have some ripe bananas on hand, be sure to give this recipe a try.
