olive oil
1 onion, peeled and chopped
2 sticks celery, trimmed and chopped
1 medium potato, peeled and cubed
2 litres organic chicken or vegetable stock
500 g fresh peas, podded
200 g watercress, washed and spun dry
sea salt
freshly ground black pepper
142 ml soured cream
extra virgin olive oil

Steps:

  • In summer, a light pea soup feels totally right - the watercress in this recipe adds a mustardy bite.
  • Heat a large saucepan and pour in a little olive oil. Throw in the chopped onion and celery. Turn the heat down and cook very gently with the lid on for 10 minutes, or until the onion has softened, but not browned.
  • Add the potato and stock and bring to the boil. Simmer for 10 minutes or until the potato is cooked. Next, drop in the peas and watercress and simmer for a further 5 minutes until the peas are cooked.
  • Remove the pan from the heat. Whiz the soup with a hand blender, or in a liquidizer, until smooth. Taste, then season with salt and pepper.
  • Serve the soup with a spoonful of soured cream swirled in, a drizzle of extra virgin olive oil and some crusty bread and butter.
  • Tip: You can use frozen peas - just simmer them in the stock a couple of minutes

2 potatoes
2 onions
2 cloves of garlic
olive oil
400 ml organic stock
3 bunches of watercress

Steps:

  • Peel and roughly chop the potatoes, onions and garlic.
  • In a large saucepan, heat a little olive oil, then sauté the potato, onion and garlic until the onions are translucent.
  • Add the stock and simmer until the potato is soft. Chop and add the watercress and simmer for a further 3 to 4 minutes.
  • Using a hand blender, liquidise the soup until smooth.
  • Serve with a swirl of crème fraîche and some Fortt's Bath Oliver biscuits, if you like.

  • What a pukka combination, simple and classy. Don't try to make this when you feel like it, make it when you can buy perfect pears, otherwise it will taste naff. For 1 person I normally use around 1/2 a pear, 2 big handfuls of watercress and 2 big handfuls of rocket. If the pear skins are nice I just give them a wash, if not I remove them with a peeler. Then cut them in 1/2 and deseed. It doesn't really matter how you cut them up. Sometimes in big rough chunks, maybe sliced up or even grated. Then place into a bowl with the watercress and rocket. The pepperiness of the leaves works so well with the sweetness of the pear. Drizzle with good extra-virgin olive oil just to coat, a small squeeze of lemon juice (because the pear juice is slightly acidic but very tasty), and season well with salt and freshly ground black pepper. Toss all this together and serve. Shave over Parmesan or pecornio, crumble your nuts over and tuck in. I love this salad with roasted meat or as a starter on its own.

MUSHROOM SARNIE

8 ounces (250 grams) butter, softened
4 sun-dried tomatoes, chopped
1 red chile, finely chopped
Garlic, finely chopped
A few sprigs fresh thyme leaves
Sea salt and freshly ground black pepper
4 large white mushrooms
1/2 loaf sourdough bread
2 tablespoons Dijon mustard
1 bunch watercress, picked and washed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C/Gas 6).
  • Mix the butter with the sun-dried tomatoes, chile, garlic, and thyme leaves. Season and spoon over each mushroom. Bake for 10 to 15 minutes, or until soft.
  • Cut the sourdough into 8 slices and spread with the Dijon mustard. Lay the watercress over the mustard and top with the baked mushrooms. Cover with the other half of bread, press down firmly, and cut.

2 cups (1 pint) cold water
3 ounces (85 grams) dried 'kombu' seaweed*
1 cup dried bonito flakes, optional*
8 ounces (225 grams) sirloin beef, sliced thinly
4 ounces (115 grams) shiitake mushrooms
4 ounces (115 grams) enoki mushrooms, stalks removed
4 ounces (115 grams) tofu, cut into chunks
1 bunch watercress, trimmed
Cooked sticky white rice
1 jar ponzu-joyu dipping sauce*

Steps:

  • Put the water in a pan and add the dried seaweed. Simmer over a medium heat for about 10 minutes. Pull out the kombu when the water starts to boil. To enhance the flavour you can add some dried bonito flakes 5 minutes before taking the kombu out. It is important not to let the water and kombu boil. Strain the broth, discarding the kombu and bonito flakes.
  • Place the beef between 2 sheets of cling film and bash with the back of a knife until it is very thin. Slice the beef into thin strips and place on a serving plate.
  • Bring the broth to the boil. Add the shiitake mushrooms, followed by the enoki mushrooms, then the tofu and finally the watercress. Serve this pan of boiling broth at the table immediately and get your guests to cook their beef by dipping it in the broth with chopsticks.
  • Give each guest a bowl of rice and a bowl for their broth, and a small dish of the ponzu dipping sauce. Don't forget the sake or Japanese beer.

3 cups (packed) watercress, thick stems trimmed
2 tablespoons (1/4 stick) butter
1 1/4 pounds russet potatoes, peeled, sliced into 1/4-inch-thick rounds
3 large leeks (white and pale green parts only), sliced
6 cups (or more) canned low-salt chicken broth
1/2 cup whipping cream
3 tablespoons minced fresh chives

Steps:

  • Blanch watercress in pot of boiling salted water 30 seconds. Drain; set aside.
  • Melt butter in heavy large pot over medium heat. Add potatoes and leeks; sauté 4 minutes. Add 6 cups broth. Bring to boil. Reduce heat; cover partially and simmer until vegetables are tender, about 20 minutes. Add watercress; simmer uncovered 5 minutes. Cool 10 minutes.
  • Working in batches, puree soup in blender until smooth. Return soup to pot. Mix in cream. Season with salt and pepper. Chill at least 4 hours and up to 1 day. Thin with more broth, if desired. Ladle soup into bowls. Sprinkle with chives.

15ml/1 tbsp olive oil
1 small onion, chopped
1 small stick celery
350g/12oz potato, peeled and diced
600ml/1pt chicken or vegetable stock
3 (85g) bags watercress
150ml/1/4pt milk
pinch of nutmeg
squeeze of lemon juice
salt and freshly ground black pepper

Steps:

  • 1. Heat the oil in a large pan, add the onion and celery and sauté over a medium heat for 5 mins until pale golden. Stir in the potato and stock and bring to the boil. Cover and simmer for 10 mins or until the potato is tender.
  • 2. Stir in the watercress, cover and cook for a further 5 mins or until the watercress is wilted. Transfer the soup to a food processor and blitz until smooth. Return the soup to the rinsed out pan add the milk, nutmeg, lemon juice and seasoning to taste. Gently reheat until piping hot and serve with crusty bread.
