1 lb boneless, skinless chicken breast
½ teaspoon salt
½ teaspoon pepper
2 cups all-purpose flour
2 eggs, beaten
2 cups seasoned breadcrumbs
1 box lasagna noodle, cooked
mozzarella cheese
24 oz marinara sauce, 1 jar
fresh parsley, to taste

Steps:

  • Lightly season the chicken breast with salt and pepper, then slice it into strips about ½ inch (1 cm) in thickness.
  • Dredge each piece of chicken in flour followed by egg and bread crumbs.
  • Quickly fry chicken strips in ½ inch (1 cm) of oil over medium heat, cooking for about 30 seconds each side to color the breading. Set cooked strips aside to drain on paper towels. (NOTE: The chicken will NOT be fully cooked after this stage.)
  • On a clean surface, assemble the roll-ups. Start by laying a cooked lasagna noodle flat. Using a spoon, spread marinara sauce on one end of the noodle. Next, add a slice of mozzarella cheese on top of the sauce followed by a piece of chicken. Starting from the end with the sauce on it, roll up the noodle like a sleeping bag towards the un-sauced side.
  • Place each roll-up into a large casserole dish that has been lightly covered with nonstick cooking spray.
  • Pour remaining sauce over roll-ups, then generously cover with mozzarella cheese.

3 tablespoons hot sauce
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon ground cinnamon
2 pounds chicken drumsticks, skinned
Nonstick cooking spray
3/4 cup plain nonfat yogurt
3 tablespoons hot sauce
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon dark brown sugar
1 teaspoon cayenne
1/4 cup blue cheese, crumbled
1/2 cup low-fat sour cream
1/2 cup fat free cottage cheese, creamed
1 tablespoon white wine vinegar
2 tablespoons finely minced onions
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the wings: In a small mixing bowl, whisk the beer, hot sauce, salt, pepper, and cinnamon. Put the drumsticks in a large, heavy plastic bag, pour in the beer mixture, seal the bag, and refrigerate at least 2 hours and up to 24 hours.

12 ounces dry elbow macaroni (about 3 cups dried)
1/2 cup white wine
4 red bell peppers, stemmed and seeded, cut into thin strips
2 medium yellow squash (about 1 pound), cut into thin strips
2 medium Vidalia onions, chopped
3 cloves garlic, finely chopped
1 tablespoon kosher salt, plus more to taste
1 tablespoon unsalted butter
2 tablespoons all-purpose flour
2 teaspoons dry mustard
1 cup skim milk
Freshly ground black pepper
1/4 teaspoon dried thyme leaves
16 ounces part- skim ricotta cheese
1/4 cup grated Parmesan
1 slice white bread, broken into small pieces

Steps:

  • Preheat the oven to 325 degrees F.
  • Spray a 2 quart baking dish with vegetable cooking spray, set aside.
  • Bring a large pot of salted water to a boil and cook the macaroni until just tender, about 8 minutes. Drain, rinse under cold running water, and return to the pot.
  • Meanwhile, heat the wine in a large nonstick skillet over medium-high heat. Whisking constantly, slowly pour in the milk and the juices from the vegetables. Add the thyme and the remaining 1 teaspoon of salt. Cook, stirring, for 4 to 5 minutes. Season with additional salt and pepper, to taste.
  • Beat the ricotta until smooth and slowly beat in the white sauce. Toss with the macaroni mixture. Transfer to the 2-quart baking dish and sprinkle with Parmesan. Sprinkle bread crumbs over the top and lightly spray them with the vegetable cooking spray. Bake until top is golden brown, about 35 minutes. Serve immediately.

1/4 cup olive oil
1/2 cup diced eggplant
3 eggs
1/2 cup ricotta
6 spears canned asparagus, finely chopped
1/2 cup grated mozzarella
1/4 cup, plus 2 tablespoons grated Parmesan
1 tablespoon dried oregano
1 teaspoon salt, plus more for seasoning chicken
1 teaspoon freshly ground pepper, plus more for seasoning chicken
4 boneless, skinless chicken breast halves
1 1/2 cups all-purpose flour
1 1/2 cups Italian-style seasoned bread crumbs
4 tablespoons unsalted butter
2 tablespoons vegetable shortening
2/3 cup prepared tomato sauce
1/2 cup diced tomatoes

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat olive oil in a medium skillet over medium-heat. Add eggplant and saute until tender, about 5 minutes. Drain and set aside.

4 ounces cream cheese, chive flavored
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
3 spinach tortillas
1 cup finely chopped cooked chicken
3/4 cup shredded chopped carrot
3/4 cup finely chopped green bell pepper
4 tablespoons chopped green onions

Steps:

  • Combine cream cheese, mayonnaise, mustard and black pepper in a small bowl; stir until well blended.
  • Spread cream cheese mixture evely onto each tortilla leaving about a 1/2 inch border.
  • Divide chicken, carrot, bell pepper and green onions evely over cream cheese leaving about a 1 1/2 inch border on cheese mixture at one end of each tortilla.
