1/2 cup warm water (110° to 115°)
1/2 cup warm 2% milk (110° to 115°)

3 large egg yolks, room temperature
1 teaspoon salt
3 to 3-3/4 cups all-purpose flour
3 tablespoons jelly or jam
1 large egg white, lightly beaten

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine milk, butter, 1/3 cup sugar, egg yolks, salt, yeast mixture and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough (do not knead)., Place in a greased bowl, turning once to grease top. 1/2 teaspoon freshly grated nutmeg
2 teaspoons salt
3 cups vegetable oil, plus more for bowl

  • In a small bowl, combine yeast, warm water, and 1 teaspoon granulated sugar. Let stand until foamy, about 10 minutes.

½ cup milk
½ teaspoon vanilla extract
¼ cup sugar
1 cup all-purpose flour
½ teaspoon baking powder

10 slices white bread
strawberry (or any flavor) jam
confectioners' sugar

Steps:

  • In a bowl, stir together eggs, milk, vanilla, and sugar until well blended and sugar is dissolved. In a separate bowl, mix flour with baking powder and salt. Gradually stir flour mixture into egg mixture until no lumps remain. Set aside.
  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Make sandwiches with the bread, spreading jam evenly in the center. Trim away crusts, and cut each sandwich into quarters, wiping away any excess jam. Dip each quarter into batter, coating completely.

The only specialty tool you'll need is a pastry bag. But you can also poke a funnel into the side of the doughnut and spoon the jelly into the center of the pastry.

1 1/4 cups milk
2 1/4 teaspoons (one package) active dry yeast
2 eggs
8 tablespoons (1 stick) butter, melted and cooled
1/4 cup granulated sugar
1 teaspoon salt
4 1/4 cups all-purpose flour, plus more for rolling out the dough
2 quarts neutral oil, for frying, plus more for the bowl.

Steps:

  • Heat the milk until it is warm but not hot, about 90 degrees. In a large bowl, combine it with the yeast. Stir lightly, and let sit until the mixture is foamy, about 5 minutes.
  • Using an electric mixer or a stand mixer fitted with a dough hook, beat the eggs, butter, sugar and salt into the yeast mixture. Add half of the flour (2 cups plus 2 tablespoons), and mix until combined, then mix in the rest of the flour until the dough pulls away from the sides of the bowl. Add more flour, about 2 tablespoons at a time, if the dough is too wet. If you're using an electric mixer, the dough will probably become too thick to beat; when it does, transfer it to a floured surface, and gently knead it until smooth. Grease a large bowl with a little oil. Transfer the dough to the bowl, and cover. Let rise at room temperature until it doubles in size, about 1 hour.
  • Turn the dough out onto a well-floured surface, and roll it to 1/2-inch thickness. Cut out the doughnuts with a doughnut cutter, concentric cookie cutters or a drinking glass and a shot glass (the larger one should be about 3 inches in diameter), flouring the cutters as you go. Reserve the doughnut holes. If you're making filled doughnuts, don't cut out the middle. Knead any scraps together, being careful not to overwork, and let rest for a few minutes before repeating the process.
  • Put the doughnuts on two floured baking sheets so that there is plenty of room between each one. Cover with a kitchen towel, and let rise in a warm place until they are slightly puffed up and delicate, about 45 minutes. If your kitchen isn't warm, heat the oven to 200 at the beginning of this step, then turn off the heat, put the baking sheets in the oven and leave the door ajar.
  • About 15 minutes before the doughnuts are done rising, put the oil in a heavy-bottomed pot or Dutch oven over medium heat, and heat it to 375. Meanwhile, line cooling racks, baking sheets or plates with paper towels.
  • Carefully add the doughnuts to the oil, a few at a time. If they're too delicate to pick up with your fingers (they may be this way only if you rose them in the oven), use a metal spatula to pick them up and slide them into the oil. It's O.K. if they deflate a bit; they'll puff back up as they fry. When the bottoms are deep golden, after 45 seconds to a minute, use a slotted spoon to flip; cook until they're deep golden all over. Doughnut holes cook faster. Transfer the doughnuts to the prepared plates or racks, and repeat with the rest of the dough, adjusting the heat as needed to keep the oil at 375. Glaze or fill as follows, and serve as soon as possible.
  • When the doughnuts are cool enough to handle but still warm, roll them around in a shallow bowl of granulated sugar to coat. Fill with your favorite jelly.

I generally make a double batch of dough, refrigerate it and pinch off portions as I need for fresh treats or for taking along to a Chanukah party.

1 1/4 cups slightly warm water or 1 1/4 cups slightly warm milk
1 tablespoon yeast
6 tablespoons sugar
1 teaspoon salt
1/4 cup canola oil
2 egg yolks
1 egg
1 teaspoon vanilla
1/4 teaspoon lemon extract
3 1/2-4 cups unbleached all-purpose flour (or half all-purpose and half bread flour)
fine sugar (for coating donuts) or sugar (for coating donuts)
1 1/2 cups apricot jam (optional) or 1 1/2 cups apricot jam (optional)
oil
shortening (three parts oil and one part melted shortening for frying, to fill up a good two-thirds of fryer)

Steps:

  • Whisk together the yeast, water and sugar, salt, oil, egg yolks, egg, vanilla and lemon extract.
  • Blend well and stir in most of the flour to form a soft dough.
  • Knead by hand, machine or in bread machine (dough setting), adding flour as needed.
  • The dough should have some body, not too slack, supple, smooth and elastic.
  • Place in a greased plastic bag and refrigerate at least 2 to 4 hours or overnight.
  • If you are in a hurry, allow dough to rest at least 20 minutes, then proceed.
  • If dough has risen at all, punch or flatten down, then pinch off pieces and form into small balls, about the size of golf balls.
  • Otherwise, roll dough out to about three-quarters of an inch.
  • Using a two and half inch or three inch biscuit cutter, cut out rounds.
  • Cover and let sit 15 minutes while heating oil.
  • In a deep fryer, or heavy dutch oven, heat about four inches of oil or a combination of oil and melted shortening.
  • Add the doughnuts to the hot oil (temperature should be about 375 F.) and fry until the undersides are deep brown.
  • Turn over once and finish frying the other side.
  • Lift doughnuts out using a slotted spoon and drain well on paper towels.
  • To fill, make a small opening and spoon in jam or jelly, or just sprinkle lightly with regular or extra fine granulated sugar by shaking doughnuts in a paper bag.
  • Test oil temperature: It's a good idea to try frying one doughnut to start with.
  • Once the doughnut seems done, take it out and cut it open to see if the inside is cooked.

2 large eggs, lightly beaten
1/2 cup raspberry, strawberry, or apricot jam
Confectioners sugar for dusting
1 2 1/2-inch round cookie cutter
1 deep-fry thermometer

1 (2-inch) and 1 (2 1/2-inch) round cookie cutter; a deep-fat thermometer

Steps:

  • Bring milk to a simmer in a 1-quart heavy saucepan, then remove from heat and stir in granulated sugar and salt. Cool milk to lukewarm (about 90°F).
  • While milk is cooling, dissolve yeast in warm water in a small bowl, stirring until creamy, then let stand until foamy, about 5 minutes. (If yeast doesn't foam, discard and start over with fresh yeast.)
  • Pour milk mixture into a large bowl and stir in 2 1/2 cups flour, 2 tablespoons oil, eggs, and yeast mixture with a wooden spoon to make a very soft dough. Spread 1 cup flour on work surface and put dough on top, scraping it from bowl with a rubber spatula.   • Turn out dough onto a floured surface and roll out with a floured rolling pin until 1/2 inch thick. Cutout rounds with 2-inch cutter. Stretch 1 round to 2 1/2 inches and put 1 teaspoon jam in center, then stretch another round to 2 1/2 inches and use it to cover jam, pinching edges of rounds firmly together. (Pinching will stretch doughnuts to about 3 inches in diameter.) Make more jelly doughnuts in same manner.
  • Cut through filled doughnuts with floured 21/2-inch cutter, rotating cutter several times to help seal edges. Transfer rounds to a floured kitchen towel, then reroll scraps (only once) and make more jelly doughnuts in same manner. (If dough shrinks after rerolling, let stand 10 minutes.) Cover doughnuts with another kitchen towel and let rise in a warm place 30 minutes.
  • While doughnuts rise, heat 3 inches oil (about 10 cups) in a deep 4-quart pot until it registers 375°F on thermometer. Fry doughnuts 2 at a time, turning occasionally, until puffed and golden brown, about 2 minutes per batch. (Doughnuts will bob in oil; hold them half submerged with a slotted spoon to brown evenly.) 1 tsp xanthan gum

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the egg, butter, and yeast mixture on low speed for a few seconds to combine. Add the flour mixture and beat for a few seconds to combine. Increase the speed to high and beat for 3 minutes longer.
  • Grease a large bowl with oil. Scrape the dough into the oiled bowl and cover with plastic wrap. Let the dough stand in a warm, draft-free place until nearly double in bulk, about 1 hour.
  • Liberally dust your rolling surface with tapioca flour. Line two cookie sheets with waxed paper. These will be your holding trays for the cut dough. Place the dough on the floured surface and dust with tapioca flour. Gently roll the dough to about 1/8 in/6 mm thick. With a 2 1/4-in/5.75-cm cookie cutter, cut out as many rounds as possible, dipping the cutter into tapioca flour before each cut. With a spatula dipped in tapioca flour, scoop up the rounds and place on the prepared sheets, spacing them at least 1 in/2.5 cm apart. Flour your hands with tapioca flour, gather the remaining dough, and squish it a few times to smooth it out, then repeat the process until all the dough is used. Try to do this in as few batches as you can. It's fine if some of the last cut rounds have some folds. You should aim for 40 rounds (you need an even amount).
  • Using a pastry brush, brush off as much tapioca flour as you can from the cut rounds. Place 1/4 tsp jam in the center of half of the rounds. With a finger dipped in water, moisten the dough around the jam. Set a plain round on top of each jam-covered round. Press around the edges to seal, then push the edges toward the center so each doughnut is fat and fluffy. You may also want to bring the cookie cutter down around the perimeter of each doughnut to cut off any extra dough sticking out from the circle and to further seal the sides. Let the doughnuts stand in a warm, draft-free place until they are puffy and about double in bulk, about 1 hour.
  • About 30 minutes before the doughnuts have risen fully, pour 3 to 4 in/7.5 to 10 cm of oil into a deep, heavy-bottomed 2-qt/2-L saucepan. Heat over medium-high heat until the oil reaches 375°F/190°C on a candy thermometer. Have ready one or two platters lined with paper towels.
  • Using the spatula, carefully lower the doughnuts into the hot oil. Cook only as many doughnuts as will fit comfortably in your pan, allowing some space between them so that they can fry all the way around. As you place the doughnuts in the oil, the oil will start to foam-this means that the doughnuts are cooking. Fry the doughnuts until brown on one side, about 40 seconds, then turn and fry until the doughnuts are brown on the second side, and puffed and golden, about 20 seconds. With tongs, remove the doughnuts from the oil and place on the paper towels to drain. Allow the oil to return to 375°F/190°C, and repeat until all the doughnuts are fried. Be sure to monitor the oil so that the temperature remains constant; you may need to adjust the heat as you fry each batch. You don't want the oil to go above 380°F/193°C, because the doughnuts will burn before they are cooked through.
  • Set a wire rack over a cookie sheet. Place the remaining 1/2 cup/100 g sugar in a bowl. Gently roll each warm doughnut in the sugar until coated. Set on the rack to cool completely.
  • Doughnuts made with yeasted dough are best eaten the day they are fried. Only make as many as you plan to eat that day. The dough may be stored in the refrigerator for up to 2 days.

1 ounce lemon juice
1 ounce rum
1 quart water
1 quart eggs
1/2 quart sugared eggs yolks

1 pound granulated sugar
1 pound, 10 ounces shortening
1 pound cake flour
9 1/2 pounds high gluten flour
1 pound yeast
Vegetable oil, for deep frying

Steps:

  • Mix all ingredients, except vegetable oil together in a large mixer fitted with a dough hook for 11 to 12 minutes or until dough reaches 78 degrees F. Set dough aside to rise for 30 to 45 minutes.
  • Divide and round dough into golf ball-sized pieces, put onto sheet pan and proof until the balls grow to around the size of soft balls, about 30 to 45 minutes.
  • Preheat a fryer to 360 degrees F.
  • Deep fry in vegetable oil until golden brown. Cool. Using a piping bag fitted with a plain tip, fill with your favorite preserves and top with powdered sugar.

SUFGANIYOT (HANUKKAH JELLY DOUGHNUTS)

This is an excellent and dependable recipe for a traditional Hanukkah (or Chanukah) treat. Adapted from Joan Nathan's book, "The Jewish Holiday Baker". Dough must rise overnight.

1 (1 tablespoon) package dry yeast
4 tablespoons sugar
3/4 cup lukewarm milk or 3/4 cup warm water
2 1/2 cups all-purpose flour
1 pinch salt
1 teaspoon vanilla extract or 1 teaspoon ground cinnamon
2 eggs, separated
2 tablespoons butter or 2 tablespoons pareve margarine, softened
1/2 cup strawberry preserves (I prefer using seedless jelly) or 1/2 cup raspberry preserves (I prefer using seedless jelly)
sugar
vegetable oil, for deep-frying

Steps:

  • Sprinkle the yeast and 2 tablespoons of the sugar into the water or milk and stir to dissolve.
  • Place the flour on a work surface and make a well in the center. Add the yeast mixture, egg yolks, salt, cinnamon, and the remaining 2 tablespoons sugar. Knead well, about 5 minutes, working the butter or margarine into the dough and kneading until the dough is elastic. You can also use a food processor fitted with the steel blade to do this, processing about 2 minutes.
  • Put the dough on a greased bowl, cover with plastic, and let it rise overnight in the refrigerator.
  • Sprinkle flour of the work surface. Roll out the dough to an 1/8-inch thickness. using a 2-inch cookie cutter or floured drinking glass, cut out circles. Let the dough circles rise 15 minutes or more.
  • With your hands, gently form the dough circles into balls.
  • Pour 2-inches of oil into a heavy pot and heat until very hot, about 375 degrees.
  • Slip the doughnuts into the oil, 4 or 5 at a time, using a slotted spoon. Turn them when brown, after a few minutes, to crisp on the other side. Drain on paper towels.
  • Using a turkey baster, a pastry bag, or an injector, inject a teaspoon of jam into each doughnut. Then roll all of them in granulated sugar and serve immediately. You can make larger sufganiyot if you like.

PACZKI (POLISH "JELLY" DOUGHNUTS)

These are usually served just before the beginning of Lent. If you don't have a good old-fashioned bakery nearby, or you want to try your hand at making these treats, here recipe and tips on paczki-making from Polish Heritage Cookery. Prep time does not include rising time, and the cooking time is for 1 batch. The number of doughnuts bepends on size made and size of cutter used. Save the egg whites for another project. I've added a note about egg white recipes.

2 dry compressed yeast cakes, crushed
1 cup lukewarm milk
1 cup flour, sifted
1 tablespoon sugar
8 egg yolks
2/3 cup powdered sugar
2 tablespoons vanilla sugar
2 1/2 cups flour, sifted
2 tablespoons grain alcohol or 2 tablespoons rum
1/2 cup butter, melted
fruit filling (such as preserves or thick jam)

Steps:

  • SPONGE:.
  • Dissolve crushed yeast in lukewarm milk, sift in flour, add sugar.
  • Mix, cover, and let stand in warm place to rise.
  • Beat egg yolks with powdered sugar and vanilla sugar until fluffy.
  • Sift flour into bowl, add sponge (yeast mixture), egg mixture, and grain alcohol or rum.
  • Knead well until dough is smooth and glossy.
  • Gradually add melted lukewarm butter and continue kneading dough until it no longer clings to hands and bowl and air blisters appear.
  • Cover with cloth and let rise in warm place until doubled.
  • Punch dough down and let it rise again. Transfer dough to floured board, sprinkle top with flour, and roll out about 1/2" inch thick.
  • With glass or biscuit-cutter, cut into rounds.
  • Arrange on floured board and proceed in either of the following ways:.
  • SMALL PACZKI:.
  • Place a spoonful of fruit filling (rose-hip preserves, cherry preserves, or other thick jam) off center on each round.
  • Raise edges of dough and pinch together over filling, then roll between palms snowball fashion to form balls.
  • Let rise in warm place until doubled.
  • LARGE PACZKI:.
  • Place a spoonful of fruit filling as above on only 1/2 dough rounds, cover each with another round, pinch edges together, and roll between palms to form a ball.
  • Let rise until doubled in warm, draft-free place.
  • Heat 1 1/2-2 lbs. lard in deep pan so paczki can float freely during frying.
  • It is hot enough when a small piece of dough dropped into hot fat immediately floats up.
  • Fry paczki without crowding several minutes until nicely browned on bottom, then turn over and fry on other side another 3 minutes or so.
  • NOTE:.
  • If using electric fryer, set temperature at 360-375 degrees.
  • If frying in stove-top pan and fat begins to burn, add several slices of peeled raw potato which will both lower the temperature and absorb the burnt flavor.
  • Paczki may also be fried in oil, but lard produces the tastiest results.
  • If you are cutting down on animal fats, you can compromise by using a lard and oil combination.
  • Transfer fried paczki to absorbent paper and set aside to cool.
  • When cool, dust generously with powdered sugar, glaze or icing.

1 cup warm milk (about 105 degrees F)
1 teaspoon active dry yeast
1/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
2 to 2 1/4 cups all-purpose flour, plus more for dusting
4 tablespoons unsalted butter, cut into pieces and softened
Vegetable oil, for brushing and deep-frying
Jelly or seedless jam, for filling
Confectioners' sugar, for dusting

Steps:

  • Bloom the yeast: Pour the warm milk into the bowl of a stand mixer. Sprinkle the yeast on top and stir to dissolve; let stand until foamy, about 5 minutes. Make the dough: Add the sugar, salt, vanilla and eggs to the bowl and whisk until blended. Add 2 cups flour and mix with the dough hook to combine, stopping to scrape down the bowl. (The dough will be sticky; if it's too wet, add the remaining 1/4 cup flour.) Add the butter and mix until smooth. Let it rise: Brush a large bowl with vegetable oil; add the dough and cover with plastic wrap. Let rise in the refrigerator, at least 4 hours or overnight.
  • Cut out the doughnuts: Line 2 baking sheets with parchment and dust with flour. Dust a clean surface with flour; turn out the dough onto the surface. Dust the dough with flour, then gently pat it out to make it easier to roll. Using a rolling pin, roll out the dough until about 1/2 inch thick. Cut the dough into 1 1/2-inch rounds with a cookie cutter; transfer to the prepared baking sheets. Reroll the scraps and cut out more rounds. Dust the dough rounds lightly with flour, cover with plastic wrap and let rest 1 hour in a warm place.
  • Fry them: Heat 2 to 3 inches vegetable oil in a large pot until a deep-fry thermometer registers 360 degrees F. Working in batches, fry the doughnuts, turning, until golden brown, 1 to 1 1/2 minutes total. Using tongs or a skimmer, remove to paper towels to drain.
  • Fill with jelly: Fit a pastry bag with a 1/8-inch-round tip; place the bag in a glass and cuff the open end over the glass. Fill the bag with jelly. Steps:

  • Mix together the yeast, 2 tablespoons of the sugar, and the milk.
  • Let sit to make sure it bubbles. Sift the flour and mix it with the remaining sugar, salt, cinnamon, egg yolks, and the yeast mixture.
  • Knead the dough until it forms a ball.
  • Add the butter or margarine.
  • Knead some more, until the butter is well absorbed.
  • Cover with a towel and let rise overnight in the refrigerator.
  • The next day, roll out the dough to a thickness of 1/8 inch.
  • Cut the dough into 24 rounds with a juice glass, or any object about 2 inches in diameter.
  • Take 1/2 teaspoon of preserves and place in center of 12 rounds.
  • Top with the other 12. Press down at edges, sealing with egg whites. Crimping with the thumb and second finger is best.
  • Let rise for about 30 minutes.
  • Heat 2 inches of oil to about 375 degrees. Drop the doughnuts into the hot oil, about 5 at a time. Turn to brown on both sides. Drain on paper towels.
  • Roll the doughnuts in sugar.

1 whole egg plus 1 egg yolk

  • On a floured surface, roll out dough to 1/2-inch thickness. Use a biscuit or a cookie cutter to cut out 2-inch rounds, placing them on a parchment-lined baking sheet. Reroll scraps and cut again. Let rise in a warm place 30 minutes.
  • In a heavy pot, heat 3 inches of oil to 365 degrees; when hot enough, a small piece of dough will brown on bottom in 30 seconds. If too hot, doughnuts will brown outside before cooking through. Working in batches, fry doughnuts until golden brown, turning once. Drain on paper towels and dust with sugar while still warm. Let oil come back to 365 degrees between batches.
  • If you have a pastry bag, fit with a small round tip and spoon jam into bag. When doughnuts are cool enough to handle, use tip of bag (or pointed tip of a serrated knife) to make a hole in bottom of doughnut. Squeeze or use a small spoon to nudge 1/2 teaspoon jam into hole. Repeat with remaining doughnuts and serve immediately. Dust again with powdered sugar.
