MY NANA'S LACE COOKIES

My Nana's Lace Cookies image

These are delicate lace cookies with an amazing taste! A tradition in our family for Christmas since I was a little girl. These cookies spread to make a very thin wafer, almost transparent. Super easy to make, but be careful, as they can be quick to burn or cool too much on your cookie sheet - and then you'll be chipping the cookies off of your cookie sheet! I hope you enjoy these as much as my family does. Store in an airtight container until serving.

JEWEL COOKIES

Jewel Cookies image

I copied this recipe from a magazine while getting my hair done some years ago, and I'm so glad I did -- they're one of my favorite cookies! My children help me make them on New Year's Day and we polish them off on the same day. (They only make 2 dozen so they're nice for ending a good meal.) Easy to make! I use raspberry jam; any kind would do fine.

MEYER LEMON LACE TUILES

Meyer Lemon Lace Tuiles image

These tuiles are as buttery and light as the traditional version, but they have an added sparkle and tartness, thanks to the addition of Meyer lemon. Their tubular shape is achieved by rolling the disks around the handle of a wooden spoon while they are still warm from the oven.

Yield Makes 54

Number Of Ingredients 8

3/4 cup plus 1 tablespoon and 1 teaspoon sugar
1/2 cup all-purpose flour
1/4 teaspoon coarse salt
1/4 cup plus 2 tablespoons fresh Meyer lemon juice, strained (from 4 lemons), or substitute regular lemons
1 tablespoon fresh orange juice, strained
3 1/2 ounces (7 tablespoons) unsalted butter, melted
1/2 teaspoon finely grated Meyer lemon zest, or substitute regular lemons
1/4 teaspoon finely grated orange zest

Steps:

  • Mix sugar, flour, and salt with a mixer on low speed. Add lemon and orange juices, and beat until just combined. Slowly pour in butter, then increase speed to medium. Add lemon and orange zests, and continue to beat until combined. Cover, and refrigerate overnight (or up to 1 week).
  • Preheat oven to 350 degrees. Spoon batter, 1 teaspoon for each cookie, onto a baking sheet lined with a nonstick baking mat, spacing mounds at least 2 inches apart. (Refrigerate remaining batter between batches.) Using a small offset spatula, spread mounds into 3-inch circles. Bake cookies until uniformly light gold, 10 to 12 minutes. Let cool on baking sheet for 1 minute. Working quickly, flip cookies over, smooth side up, and roll each around the handle of a wooden spoon. Let stand until hardened. (If cookies become too difficult to roll, return to oven until warm and flexible.) Repeat with remaining batter. Rolled cookies will keep, layered between parchment and covered, for up to 3 days.

LACE COOKIES

Provided by Food Network

Time 12m

Yield 12 servings

Number Of Ingredients 7

1 egg
3 cups brown sugar
2 cups quick-cooking oats
1 cup melted butter
1 tsp. vanilla extract
Pinch of salt
1/2 cup chopped pecans or other nuts

Steps:

  • Heat oven to 350 degrees. Mix all ingredients in a bowl until well combined. Line baking sheets with parchment paper or no-stick aluminum foil. Drop batter 3/4-tsp. at a time on baking sheet, leaving plenty of space between each. Cookies will spread to 4 or 5 inches in diameter when baked.
  • Bake 10 to 12 minutes, until thin and golden. Check early to make sure they don't overbrown. Line a wire rack with wax paper. Carefully remove cookies from baking sheet. They will be sticky, and a thin, metal spatula works best. Gently transfer to wax paper on wire rack and let cool.

Tips:

  • Make sure your oven is preheated to the correct temperature before baking the cookies. This will ensure that they bake evenly and don't overcook.
  • Use a silicone baking mat or parchment paper to line your baking sheet. This will prevent the cookies from sticking to the pan.
  • Be careful not to overmix the dough. Overmixing can result in tough cookies.
  • If you want the cookies to have a chewy texture, chill the dough for at least 30 minutes before baking.
  • Bake the cookies until they are golden brown around the edges. This should take about 10-12 minutes.
  • Let the cookies cool completely before decorating them.

Conclusion:

Jeweled lace cookies are a delicious and festive treat that are perfect for any occasion. They're easy to make and can be decorated in a variety of ways. With their delicate lace-like texture and sparkling jewels, these cookies are sure to impress your friends and family.
