This is my great-grandma's candied yams recipe. I started making them a few years ago, now everyone asks for them every year. The secret I think is in the orange juice and slow cooking.

Steps:
- Bring a large pot of water to a boil over high heat. Add yams and boil for 10 minutes. Drain and rinse twice with cold water. Soak in cold water for 15 minutes.
- While yams are soaking, preheat the oven to 275 degrees F (135 degrees C).
- Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.
- Peel and cut yams into chunks and place in a large baking dish. Dot with butter and sprinkle with sugar mixture so all yams are coated. Carefully pour enough orange juice into the bottom of baking dish to measure 1/2 inch.
- Bake in the preheated oven, basting often, until yams are tender and the liquid is thick and sticky, 3 to 3 1/2 hours. Sprinkle with mini marshmallows. Turn on the oven's broiler. Broil until marshmallows are melted and toasty, about 5 minutes.

- Add yams to a pot of boiling water, cover and after allowing water to return to a boil, cook for 30-35 minutes.
- Rinse in cold water.
- Remove the skins from the yams.
- Cut into 1/4 inch slices.
- Quarter the apples and cut into 1/4 inch slices.
- Spray a large rectangular or oblong pan with cooking spray of your choice.
- Layer the yams and the apples.
- Pour the orange juice over both layers.
- Dot with butter or margarine if desired.
- Top with the raisins.
- Sprinkle with cinnamon and nutmeg.

- Preheat oven to 350 degrees F (175 degrees C).
- Drain and rinse the yams.
- In a food processor, combine together the yams (sweet potatoes), butter, spices, salt, brown sugar, orange juice, eggs, and Southern Comfort.
- Pour into rectangular casserole dish or lasagna pan.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, checking to see that the center of the potato mixture is cooked.
- After it' s cooked, take it out and place large marshmallows end-to-end all over the top; they will melt slightly from the heat of the potatoes, but that's okay.
- About 10-15 minutes before you're going to serve the yams, place them under the broiler in the oven for about 5 to 10 minutes until they're golden brown - be careful they don't burn.

This is one of the family Holiday favorites...I got this recipe from my sister in law and we have been having it ever since....It is like having desert and meal at the same time....It reminds me of a yam pie (sweet potato pie) It is wonderful with Turkey and Ham...It is not prejudice what so ever...It goes good with chicken and goose or duck too....

- Pre heat oven to 375* use a 9 inch cake pan or, I like to use a medium size roasting pan when having to double the recipe....
- In large mixing bowl (drained) yams use a mixer and cream add milk and melted butter and cream together, add vanilla, beaten eggs, salt and cream together....Till nice and smooth...
- Pour mixture into pan that you are using to bake in...
- Topping: In medium size mixing bowl add Pecan pieces, brown sugar, flour coconut and crumble together by hand, when mixture is well mixed, gradually pour in melted butter and mix by hand...when everything is mixed well, sprinkle over top of the yam mixture and pat slightly over the top of mixture.....
- Bake for 25 minutes....Serve nice and hot....YUMMMMY
