JOHNNY CAKES (THE BAHAMAS)

Steps:
- Mix all the dry ingredients together, then cut in the shortening. Work the mixture with your hands until the grains are about the size of rice.
- Add milk until you get a soft dough (I had to use a bit more than the recipe called for).
- Turn out onto a floured surface and knead until smooth.
- Let the dough rest for 10 minutes, then transfer it to a greased 9x9 inch pan. You will have to press it down so it fills in all the corners. Poke the top of the dough a few times with a fork.
- Bake at 350 degrees for 20 to 25 minutes. You can tell the cake is done when it starts to turn a little golden around the edges.
RHODE ISLAND JOHNNY CAKES
Johnny cakes are the New England equivalent of tortillas. The simplest recipes call for nothing but cornmeal, boiling water, and a little salt. The batter should be fairly thin so that when fried on a hot griddle, the batter is no more than a quarter of an inch thick. Rhode Islanders take their johnnycakes so seriously that they...

Steps:
- 1. Whisk together cornmeal, salt and sugar (if used). Bring water to a boil and pour over the meal mixture, whisking to prevent lumps. Let the batter rest 10 minutes.
- 2. Butter a large skillet or griddle and bring it to about 375 degrees, just to a sizzle (do not burn the butter). Add enough milk (1/2 to a cup) to the batter to make it the consistency of mashed potatoes, and drop by spoonfuls to make cakes about 2 or 3 inches wide and several inches apart (they will spread).
- 3. Let the cakes gently sizzle on the grill for about 6 minutes or as long as 11 minutes until you bring them to a deep golden brown on the bottom and slightly firm on the top, before turning them over.
- 4. Add some more butter to the griddle, and/or place a thin pat of butter on each cake, before turning them over and cooking for another 6 minutes (or longer) until they are a deep golden brown color.
- 5. Serve with butter and maple syrup.

LARDY JACKS & JOHNNY BOYS (MEDIEVAL ENGLISH SWEET CAKES)
This recipe is actually 3 in 1. The base for this is a Basic English Egg Dough and then 2 variations of the recipes These are really quite nice, they are like a sweet bisquit. I got this recipe when I was helping my daughter a school project. The original recipe dates back to the 17th century. It was almost impossible to read (I'm not sure if that was they way they wrote back then or a literacy issue) Anyway this a modernized version. It was really kind of fun since I enjoyed the recipe I kept it.

Steps:
- 1. In a medium bowl whisk together the flour, cornmeal, baking powder, sugar and salt.
- 2. In a separate medium bowl whisk together the eggs and buttermilk. Add the water and melted butter to the egg mixture whisking just until combined. Now add the wet ingredients to the dry ingredients stirring just until combined.
- 3. Heat a little bit of vegetable oil in a large skillet over medium heat. Add 2-3 tablespoons batter for each cake to the pan. Cook until bubbles form on the top and the edges are a deep golden brown. Flip and cook until the other side is golden brown. For best results serve promptly.
Tips:
- Use fresh, high-quality ingredients: The better the ingredients, the better the johnnycakes will be. Look for fresh cornmeal, buttermilk, and butter.
- Don't overmix the batter: Overmixing the batter will make the johnnycakes tough. Mix just until the ingredients are combined.
- Let the batter rest: Letting the batter rest for a few minutes before cooking will allow the cornmeal to absorb the liquid and produce a more tender johnnycake.
- Cook the johnnycakes over medium heat: Cooking the johnnycakes over medium heat will help them to cook evenly and prevent them from burning.
- Serve the johnnycakes warm: Johnnycakes are best served warm, right out of the pan. You can top them with butter, honey, or maple syrup.
Conclusion:
Johnnycakes are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to your liking.
