This is my DH's recipe. He makes these for potlucks and other get togethers, throws them in a crockpot to keep them warm and brings home an empty pot every time. Measurements are guestimates, if this makes you nervous, don't worry, everything will work out perfectly!

2 lbs chicken wings
1/2 cup butter
4 garlic cloves, minced
1/2 cup brown sugar
2 cups orange juice

Steps:

  • In a large skillet over a low/med heat saute chicken wings in butter and garlic until wings brown.
  • Mix brown sugar and orange juice, add to the pan and finish cooking wings. Sauce should not be boiling, but a gentle simmer.
  • Wings should have a nice glaze and the meat should be about falling off the bone when they are done.
  • If needed you can add more juice as the wings cook.
  • Note: Move the wings around as they cook so that they cook evenly and don't brown too much on one side. Don't cook over too high a heat, the butter and garlic will burn quickly and the orange juice will cook off too quickly. You can also put a lid on the pan after adding the orange juice and brown sugar to help slow evaporation and reduce spatters.

2 Tbsp. Johnny's Parmesan Garlic Seasoning
2 Tbsp. Johnny's Seasoning Salt
1/3 cup olive oil
3/4 cup parmesan cheese- divided

Steps:

  • Preheat oven to 375 degrees
  • Combine oil, Johnny's Seasoned Pepper, Johnny's Seasoning Salt, Johnny's Parmesan Garlic Seasoning, 3/4 cup parmesan cheese & chicken in a large bowl & toss to thoroughly coat the chicken
  • Layout in a single layer on a large baking sheet with a rack
  • Bake at 375 for 1 hour (until juices run clear)
  • Remove & sprinkle with remaining parmesan cheese & additional Johnny's Parmesan Garlic Seasoning

1 small onion, chopped
2 garlic cloves, chopped
2 -3 jalapenos, chopped
1/2 cup beer (or ale)
1 cup barbecue sauce
1/2 cup chili sauce (or habenero sauce)
1/2 cup apricot preserves
1/2 cup honey
1/4 cup brown sugar
2 tablespoons texas pete, sauce
1 tablespoon Tabasco sauce
1 teaspoon ground chipolte pepper seasoning
2 cups vegetable oil
2 cups flour
2 tablespoons garlic powder
20 chicken wings, separated at joints and tips removed
bleu cheese salad dressing

Steps:

  • SAUCE: Heat butter in a medium saucepan. add onion, garlic and jalapeno peppers. saute' for 1-2 minutes.
  • Add remaining sauce ingredients, heat to a boil, stirring occasionally. Reduce heat and simmer 20 minutes or until thickened.
  • CHICKEN: Meanwhile, heat oil in deep fryer or dutch oven to 350°F To a plastic grocery bag, add flour and garlic powder.
  • When oil is ready, dredge chicken in flour mixture, shake off excess flour and place into hot oil. Reduce temperature to medium, cover and fry for about 3-4 minutes. Uncover, stir to turn chicken, and continue frying until golden and cooked through. NOTE: Do in batches, do not overcrowd chicken pieces.
