- In a large skillet, cook sausage until browned; drain. Stir in onion and green pepper until vegetables are tender. Add garlic; cook 1 minute longer. - Peel and devein the shrimp. The shells may be used to make a broth (see recipe).
- Heat the oil in a kettle or large saucepan with a heavy bottom over medium heat. Add the flour, and cook, stirring constantly, until lightly browned. Do not burn.
- Add the onion, green onions, green pepper, celery and garlic. Cook, stirring, until wilted. Add ham and stir. Add the tomatoes, thyme and oregano, and bring to a boil. Stir in the uncooked rice, if desired. Add salt, pepper and shrimp broth. Reduce heat to medium-low, and simmer, uncovered, about 25 minutes; add the shrimp and stir. QUICK SAUSAGE AND SHRIMP JAMBALAYA

- Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring, until softened, 5 to 7 minutes. Add the sausage and cook until starting to brown, about 5 minutes.

- 1.) Brown the sausage till crisp, remove and set aside.
- 2.) Brown the chicken in sausage oil, remove and set aside.
- 3.) Saute your Holy Trinity (peppers, celery and onion) 5minutes.
- 4.) Add dry spices and cook 5 minutes more.
- 5.) Add meat, tomatoes, rice and stock and bring to a simmer.
- 6.) Now you can cover and cook on stove top for 1 hour or transfer to a 10 X15 glass pan cover with foil and cook 1 hour.
- 7.) If you want to add shrimp do it at minute 45 and cook for 15 more minutes.
- 8.) Now add Fresh Parsley and scallions and fold into rice mixture and serve with ice cold beer!

- Heat 1 tablespoon of oil in a 6-quart Dutch oven over medium- high heat. Add the chicken, paprika, black pepper, garlic powder, Cajun seasoning, cayenne, and salt. Stir to coat.
- Once chicken is fully cooked, about 5 minutes, add the sausages and cook for 3 minutes.
- Remove the chicken and sausage from the pot and set aside.
- Using the same pot, add 1 tablespoon of oil to the pot. Add the onion, celery, green pepper, jalapeño, garlic, and 1 teaspoon of salt. Cook until vegetables are soft and tender, scraping any brown bits on the bottom of the pot, about 8-10 minutes.

The jambalaya is finished when the rice is fully cooked. Serve in large bowls.

JON'S EASY SHRIMP JAMBALAYA
Steps:
- Put shrimp into warm water to thaw Dump chicken broth and salsa into crock pot, high heat Cut Andouille sausage in half lengthwise, then slice in 1/4 inch pieces so shrimp & sausage about the same size Chop onion and celery In skillet, medium high heat, add olive oil, brown Andouille sausage, then dump into crock pot, saving oil Lightly saute onion and celery, then dump into crock pot. Turn crock pot to low, will take about 2 hours to be simmering throughout. In the meantime peel shrimp, divide in half, and dump into crock pot once pot has been simmering as above; let simmer for additional 15 minutes RICE You can add rice directly to crock pot - makes thicker jambalaya, may need to add additional chicken broth. I prefer the following: When shrimp have turned white, take 2 cups of broth from crock pot, put in pot on stove, add can of chicken broth, and add rice. Heat at medium until simmering, then turn down, cover, and simmer for about 3/4 hour or until done.
