ITALIAN AMERICAN COOKIE SANDWICHES

Time 1h

Yield 50 cookies

Number Of Ingredients 8

1 stick (1/2 cup) unsalted butter, softened
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1 large egg
1 1/4 cups all-purpose flour
1/2 cup miniature chocolate chips, optional
1/2 cup strawberry, raspberry or other fruit preserves

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 2 heavy large baking sheets with parchment paper. Using an electric mixer, beat the butter, sugar, vanilla, and salt in a large bowl until fluffy. Beat in the egg. Add the flour and mix just until a dough forms.
  • Fit a pastry bag with a large star tip, and fill the pastry bag with the cookie dough. Pipe the dough onto the prepared baking sheets into stars, spacing 1-inch apart. If desired, press about 4 miniature chocolate chips into the center of each star at this point. Bake the cookies until they are pale golden around the edges and on the bottom, about 15 minutes. Cool the cookies for 5 minutes. Using a metal spatula, transfer the cookies to a rack and cool completely.
  • When the cookies have cooled, spoon approximately 1/4 teaspoon of preserves atop the flat side of 1 cookie. Press a second cookie onto the preserves. Repeat with the remaining cookies and preserves. (Can be made 2 days ahead. Store between sheets of waxed paper in an airtight container at room temperature.)
  • Cook's Notes: Alternately, the cookies can be made into thumbprint cookies. To do so, refrigerate the dough until it is cold, about 2 hours. Roll 2 teaspoons of dough for each cookie into 1-inch-diameter ball. Place the cookies on the baking sheets, spacing 2 inches apart. Make a deep indentation in the center of each cookie by pressing the back of a teaspoon into the cookies. Fill each indentation with 1/2 teaspoon of strawberry or raspberry preserves or chocolate chips, and bake as directed.
  • A chilled chocolate ganache may be used in place of the preserves to fill the indentations in these cookies. To do this, do not fill the indentations before baking the cookies. While the cookies bake, make the ganache by mixing equal parts of warm cream and chocolate until the chocolate melts and the mixture is smooth, then chill the ganache. Once the cookies have baked and cooled, and the chocolate ganache is cold and firm but still spreadable, spoon or pipe the chilled ganache into the empty indentations on the cookies.

Time 1h29m

Yield 12 sandwich cookies

Number Of Ingredients 16

1 cup plus 2 tablespoons all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 packed cup light brown sugar
1/2 cup sugar
1 large egg, at room temperature
1/2 teaspoon pure vanilla extract
1 heaped cup (6 ounces) 60 percent cacao bittersweet chocolate chips (recommended: Ghirardelli)
4 ounces cream cheese, at room temperature
2 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract
Assorted food coloring, optional
Water, as needed

Steps:

  • Cookies: Put an oven rack in the center of the oven. Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper or silicone mats. Set aside.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Using an electric stand mixer fitted with a paddle attachment, beat the butter and sugars together until fluffy. Beat in the egg and vanilla. With the machine running, gradually add the flour mixture until just blended. Stir in the chocolate chips. Using a 1-ounce ice cream or cookie scoop, form 12 equal-sized pieces of dough onto each baking sheet. With damp hands, form the dough into balls. Flatten the tops of the dough slightly and bake until the tops of the cookies begin to crack slightly, about 14 minutes. Cool for 5 minutes. Transfer the cookies to a wire rack to cool completely, about 20 minutes.
  • Filling: In a medium bowl, using an electric mixer, beat the cream cheese and vanilla together until fluffy. Gradually add the powdered sugar and mix until smooth. Color the frosting by mixing in the food coloring, 1 drop of at a time, until the desired color is reached. Add water, if needed, 1/2 teaspoon at a time, to make the consistency spreadable.
  • Spread the frosting on the flat side of half of the cookies and put the remaining cookies on top. Refrigerate for 30 minutes to allow the filling to stiffen slightly. Serve at room temperature.

SURPRISE SANDWICH

Surprise Sandwich image

I was given this recipe by an older woman from OK, 30 years ago. It is always a hit with adults who spend time trying to figure out the ingredients as the chili sauce makes it look like it has some kind of ground meat in it, and they can see the eggs and vegetables. This is not particularly a kid-favorite - because of the vegies. Prep-time does not include boiling the eggs.

Provided by Trisha W

Categories     Lunch/Snacks

Time 20m

Yield 8 sandwiches

Number Of Ingredients 7

8 ounces cream cheese (at room temp.)
3 tablespoons onions, chopped
3 tablespoons bell peppers, chopped
3 tablespoons chili sauce
3 hard-boiled eggs, chopped
2/3 cup pecans, chopped
1 loaf bread (no crust-saves work)

Steps:

  • Mix the first 4 ingredients well; then fold in the eggs and nuts - so that the eggs don't get smashed.
  • Salt and pepper mixture.
  • Butter one slice of bread, put mixture on the another, then put the two slices together to form a sandwich.
  • Cut off crusts.
  • Can cut into 3 finger sandwiches if serving at a pot-luck.

Tips:

  • Prep Work: Before you begin baking, ensure all ingredients are at room temperature unless the recipe specifies otherwise. This will help the ingredients blend more evenly and result in a better texture.
  • Measuring Ingredients: Use measuring cups and spoons to ensure accurate measurements. Avoid using kitchen utensils like tablespoons or teaspoons, as they may not provide precise measurements.
  • Line Baking Sheets: To prevent cookies from sticking to the baking sheets, use parchment paper or silicone baking mats. This also makes cleanup easier.
  • Chilling the Dough: For certain cookies, chilling the dough before baking is recommended. This helps the cookies hold their shape better and prevents them from spreading too much.
  • Baking Times: Keep a close eye on the cookies while they are baking. Ovens may vary in temperature, so adjust the baking time accordingly. Insert a toothpick into the center of a cookie; if it comes out clean, the cookies are done.
  • Cooling Cookies: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This helps prevent the cookies from breaking.
  • Storing Cookies: Store cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze the cookies in an airtight container for up to 2 months.
