This is a recipe I came up with after reviewing several chicken chili recipes and combining several ideas. The spices, especially the cumin and oregano are adjustable. I sometimes use a little more, taste as you go! Every time I take it to pot luck or company dinners, I'm always asked for the recipe. I hope you enjoy it as much as we do!

3 cup(s) cooked chicken, chopped
1 medium onion, chopped
2 can(s) chicken broth
5 can(s) navy or great northern beans, drained
1 tablespoon(s) ground cumin
1 teaspoon(s) ground oregano
1 teaspoon(s) garlic powder
2 can(s) green chiles, chopped (7 ounce can)
1 teaspoon(s) crushed red pepper
1 1/2-2 cup(s) monterey jack cheese or colby jack cheese,shredded
1 teaspoon(s) cilantro, dried (optional)
- sour cream, optional

Steps:

  • In a large pot or dutch oven, sauté the onion in 2 Tbsp of margarine until tender, add beans, 1 can of chicken broth, spices and green chiles. Simmer for about 15 minutes, add the chicken and remaining broth. Simmer, About 30-45 minutes, add cheese, stirring until melted. Serve with sour cream and additional shredded cheese if desired.

½ cup raisins
1 cup thinly sliced celery
¾ cup seedless grapes, quartered
½ cup walnuts, toasted and chopped
1 avocado - peeled, pitted and diced
1 tart apple - peeled, cored and chopped
1 cup mayonnaise
1 teaspoon fresh lemon juice

Steps:

  • In a large bowl toss together the chicken, raisins, celery and grapes. Fold in the avocado and the apple. Mix in the mayonnaise and lemon juice. Chill.

I love the taste of the traditional tomato beef however I prefer chicken and after many trials and errors this is what I have come up with and my whole family loves it.

3 chicken breasts, cut into bite size pieces
1 teaspoon rice wine vinegar
1/2 teaspoon sugar
2 tablespoons soy sauce
1 tablespoon fresh ginger, minced
1/4 teaspoon pepper, freshly ground
1 teaspoon cornstarch
1/4 cup chicken broth
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon sugar
2 tablespoons ketchup
1 tablespoon canola oil
12 green onions, sliced diagonally
2 green peppers, cut into chunks
4 tomatoes, seeded and cut into wedges
4 stalks celery, cut into chunks

Steps:

  • Get your rice started, hopefully you have a rice maker.
  • In a large bowl, combine the meat, wine, sugar, soy sauce, ginger, pepper and the cornstarch and allow to marinate for atleast 30 minute
  • In a small bowl, combine the broth, cornstarch, soy sauce, sesame oil, sugar and ketchup; set aside.
  • Place wok over high heat and add the 1 tablespoons of canola oil. Add the chunks of chicken and stir fry for several minutes until lightly browned.
  • Add the regular onions and the green onions and stir fry for 1 minute.
  • Add the remaining vegetables except the tomato and stir fry until the vegetables are crisp-tender. Add the remaining broth mixture and the tomatoes, cook for 1 minute or until it thickens slightly.
  • **note** Roma tomatoes tend to work the best on this recipie and again if you want to make it vegetarian simply exchange tofu for the chicken and use a vegetable broth instead of chicken broth.

1 1/2-2 teaspoons instant chicken bouillon, to taste
1/2 teaspoon minced garlic
1/4 cup angel hair pasta, in 1 inch pieces
1 cup packed mixed salad green, of baby spinach,arugula,and grated carrot (or other salad mix you like)

Steps:

  • Combine the water, bouillon, garlic, and pasta pieces.
