This came from my friend Julie who was originally from Missouri however, lived in many places as she was married to a military husband. Julie doubled the recipe and I single it. The soup has a thin broth. Enjoy.

1/2 lb bacon
1 sweet onion (diced)
2 cups water
6 ounces clam juice
8 medium potatoes (peeled, diced)
1 cup heavy cream
1 cup half-and-half
1 cup milk
24 ounces canned clams, minced, reserve juice
8 ounces canned crabmeat
1/2 cup butter
1/4 teaspoon salt (to taste)
1/4 teaspoon black pepper (to taste)

Steps:

  • In a 3-quart dutch oven fry bacon until crisp and crumbles easily. (Remove bacon and set aside).
  • Saute onion in bacon fat until tender.
  • Add water, clam juice, potatoes and cook until potatoes are tender.
  • (Do not drain).
  • Add heavy cream, half-and-half and milk stirring frequently so it doesn't scorch.
  • Heat to steaming (do not boil).
  • Add clams w/juice, crab, bacon, butter, salt and pepper and cook for 5 minutes more stirring frequently.
  • To Reheat: Only reheat as much as you can eat. Don't reheat the whole pot.

4 ounces clam base (clam bouillon)
1/2 cup Chardonnay
1 1/2 pounds russet potatoes, halved and julienned
1 medium yellow onion, halved and julienned
1/4 cup butter
1 tablespoon Italian seasoning
3/4 tablespoon black pepper
8 cups half-and-half
3.3 ounces cornstarch (a little less than a cup)
1/2 pound Dungeness crabmeat (you can substitute chopped clams)

Steps:

  • Combine the clam juice, clam base, Chardonnay, potatoes, onions, butter, Italian seasoning, pepper and 1 cup water in a pot. Cook over medium-high until the potatoes soften. Add the crabmeat (or clams if crab is unavailable).
  • Meanwhile, heat the half-and-half in a pot over medium-high heat (do not boil); whisk in the cornstarch. Cook, whisking, until heated through and thickened.
  • Add the thickened half-and-half mixture to the chowder. Serve right away.

1 1/2 pounds russet potatoes (cut in half and julienned)

1 half gallon half&half
1 cup of water
3.3 Oz of corn starch or little less than a cup
Half pound of Dungeness crab meat (substitute with chopped clams if fresh seafood is unavailable)
8oz sour cream
8oz mayo
1/2 cup butter (melted)
1/2 cup garlic (minced)
6oz shredded parmesan cheese

  • Use two separate pots, in one add half&half and heat medium high (do not boil) add corn starch and whisk well.
  • Base:In the other pot all at once add water, clam juice, clam base, chardonnay, butter, Italian seasoning, pepper, potatoes, and onions. Cook at medium high until potatoes get soft and then add crab meat (or clams if crab is unavailable)
  • Once half&half+corn starch mixture is heated up and thickened, add base and stir. Able to serve right away

2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. 2 medium boiling potatoes
1/2 cup water
1/2 lb jumbo lump crab meat
3 cups whole milk
1/8 teaspoon cayenne, to taste

  • Chop bacon and in a 2-quart heavy saucepan cook over moderate heat, stirring occasionally, until crisp.
