These are tasty little bites to munch on!! From Southern Living (1985), they have been staples around our house during the holidays and have now made their way into summertime entertaining - we enjoy with chilled chardonnay, pinot noir and even some merlots. If the dough seems too crumbly to form around dates, just add a drop or two of water and mix well until the dough holds together.

JUNE BUG (COCKTAIL)

June Bug (Cocktail) image

Oh so good! Like sipping a bit of the tropics. I'm not much of a drinker, but this has all my favorites... midori, pineapple, coconut; a little sweet, a little sour. Yum! I've seen the banana liquor left out in some recipes, so I've listed it as optional.(F.Y.I. 1 oz. is the size of a small shot glass.)

Tips:

  • Choose fresh, ripe juneberries: Look for berries that are deep purple in color and have a plump, firm texture. Avoid berries that are bruised or have any signs of mold.
  • Wash the juneberries thoroughly: Rinse the berries gently under cold water to remove any dirt or debris. Be careful not to crush the berries.
  • Pit the juneberries (optional): If you prefer a smoother texture, you can pit the juneberries before using them. To do this, use a paring knife to cut a small X in the center of each berry and then gently squeeze out the pit.
  • Juneberries can be used in a variety of recipes: They can be eaten fresh, used in pies, jams, jellies, and other desserts, or added to salads, smoothies, and yogurt parfaits.
  • Juneberries are a good source of vitamins and minerals: They are high in vitamin C, potassium, and fiber, and also contain antioxidants that can help protect your cells from damage.
