Steps:

  • Put kale in a large mixing bowl.

1 teaspoon ground chipotle powder

2 small garlic cloves, grated on a rasp, separated
4 skinless, boneless chicken breast halves
1/4 cup freshly squeezed lemon juice
2 tablespoons Dijon mustard
1 tablespoon minced shallot (from about 1/2 small)
2 large bunches kale, center stems removed and leaves thinly sliced crosswise (about 1 1/2 pounds total)
12 ounces Brussels sprouts, trimmed and cored, finely grated or shredded with a knife

Steps:

This was my first time using lacinato kale, which I find I like better than standard kale (although the standard kale or chard can also be used). I was thrilled to find such a delicious dish made of complete-protein quinoa and antioxidant-rich kale. AND it's easy to make all in just one pot!

1 bunch lacinato kale, washed and chopped into 1-inch lengths
1 meyer lemon, zested and juiced
2 scallions, minced

1/4 cup crumbled goat cheese (feta is also good)
salt & pepper

Steps:

  • Bring the water to a boil in a covered pot. Add the quinoa, cover, and lower the heat until it is just enough to maintain a simmer. Let simmer for 10 minutes, then top with the kale and re-cover. Simmer another 5 minutes, then turn off the heat and allow to steam for 5 more minutes.
  • While the quinoa is cooking, take a large serving bowl and combine half of the lemon juice (reserving the other half), all of the lemon zest, scallions, walnut oil (you can substitute olive oil if you desire), pine nuts, and goat cheese.
  • Check the quinoa and kale when the cooking time has completed--the water should have absorbed, and the quinoa will be tender but firm, and the kale tender and bright green. If the quinoa still has a hard white center, you can steam a bit longer (adding more water if needed). When the quinoa and kale are done, fluff the pilaf, and tip it into the waiting bowl with the remaining ingredients. Toss to combine, seasoning with salt and pepper, and the remaining lemon juice if needed.

1 tablespoon extra-virgin olive oil
1 pound bulk pork sausage
1 onion, finely chopped

Steps:

  • Bring chicken stock and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.

2 tablespoons chopped shallots
¼ cup apple cider vinegar
2 tablespoons fresh lemon juice
1 teaspoon maple syrup
½ cup extra virgin olive oil
½ teaspoon sea salt

¾ cup roughly chopped hazelnuts
3 tablespoons cane sugar
1 pinch cayenne pepper
2 small bunches lacinato (dinosaur) kale, stems removed
½ pound Brussels sprouts
¾ cup cooked and cooled quinoa
⅔ cup pomegranate seeds
3 green onions, thinly sliced
⅔ cup shaved Parmesan cheese, plus more for garnish
Reynolds Wrap® Aluminum Foil

Steps:

  • In a food processor, combine the shallots, vinegar, lemon juice, maple syrup, olive oil, salt and pepper and blend until smooth. Set aside.
  • Line a small baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
  • In a non-stick pan over medium heat, combine the hazelnuts, sugar and cayenne. Stir with a silicone spatula until the sugar has melted and sticks to the nuts, about 5 minutes; turn down the heat to prevent burning if needed. Spread the sticky nuts out on the foil-lined sheet to cool. When the nuts are cool enough to handle, break them up by hand.
  • Stem the kale and chop well. Using a mandoline, shred the Brussels sprouts, discarding the tough ends. Combine both in a large salad bowl. Add the hazelnuts, quinoa, pomegranate seeds, green onions and cheese. Dress to your liking and serve immediately.

4 tbs olive oil
1 small onion
2 cups quinoa
1 1/2 cups water
3 cups kale
1/3 cup red wine vinegar
1 tea Dijon mustard
1/2 cup toasted pine nuts
1/2 cup parmesan

Steps:

  • in med saucepan heat 1 tbs oil over med heat. Add onion and sauute stiring freq until translucent 5min. Add quinoa and sauté stirring until lightly toasted. 2-3 min. Add water and kale stirring to combine. Bring to simmer reduce heat to low simmer covered until quinoa is tender and wayer gone 15-18 min. Put in lg bowel let cool stir occ. In small bowel whisk together vinegar and mustard until smooth. Slowly add remaing oil whisking continuously. Drizzle the dressing over quinoa. Stir in nuts and cheese and season to taste. Cover and chill completely. Stir before serving

1 meyer lemon, zested and juiced
2 scallions, minced
1 tablespoon toasted walnut oil
3 tablespoons toasted pine nuts
1/4 cup crumbled goat cheese
salt and pepper

Steps:

  • # Bring the water to a boil in a covered pot. Add the quinoa, cover, and lower the heat until it is just enough to maintain a simmer. Let simmer for 10 minutes, then top with the kale and re-cover. Simmer another 5 minutes, then turn off the heat and allow to steam for 5 more minutes. Ask a question about this step. # While the quinoa is cooking, take a large serving bowl and combine half of the lemon juice (reserving the other half), all of the lemon zest, scallions, walnut oil (you can substitute olive oil if you desire), pine nuts, and goat cheese. Ask a question about this step. # Check the quinoa and kale when the cooking time has completed -- the water should have absorbed, and the quinoa will be tender but firm, and the kale tender and bright green. 1 cup chopped celery (about 3 stalks)
4 cloves garlic, minced

3/4 cup dry quinoa
1/2 tsp dried thyme
1/2 tsp dried rosemary, crushed
4 (14.5 oz) cans low-sodium chicken broth (7 cups)
Salt and freshly ground black pepper, to taste
1 (15.5 oz) can Great Northern or Cannellini beans, drained and rinsed
4 cups packed kale, roughly chopped (thick ribs chopped and discarded)
3 Tbsp chopped fresh parsley
2 Tbsp fresh lemon juice
Finely shredded parmesan cheese, for serving

  • Add chicken to a 6 or 7 quart slow cooker, then add onions, celery and garlic, then drizzle with olive oil.
