KALUA PORK

Kalua Pork image

Our pastor's wife, while we were stationed in Hawaii, gave me this recipe. It taste just like the imu pit roast pork, like they serve at luaus. It's really easy to prepare too. I get tons of compliments and requests for the recipe every time I make it. It is really suppose to say 1 handful of rock salt, but the system won't take that as a measurement. I usually halve the recipe, so I'm not real sure how many servings this makes. I know it makes LOTS. Also - not sure what the size of the bottle is for liquid smoke, but it's small and I believe it is the only size you can buy at a regular grocery store. This can be frozen and tastes just as good, even a month later!

EASY KALUA PORK

EASY KALUA PORK image

Categories     Sandwich     Pork     Super Bowl     Low Carb     Winter     Potluck

Yield 15 people

Number Of Ingredients 5

I fresh pork butt, about 5 pounds
Outer leaves of green cabbage, 5-6
1 T. salt
3 T. Liquid smoke, Mesquite preferred
2 sheets of heavy aluminum foil, seamed together and large enough to wrap pork.

Steps:

  • Lay out foil. Make a base of cabbage leaves and place pork in center. Sprinkle salt over pork. Bring cabbage leaves and foil up around pork, then sprinkle Liquid smoke over. Top with remaining cabbage leaves, then seal in foil. Place in crock pot set to high for one hour, reduce to low and continue to cook for 7 hours. When done and falling apart, allow to cool slightly, remove cabbage leaves and shred. Remove bone if a bone in roast, and remove fat. Strain liquid and defat. As an initial meal, we like this served with sautéd fresh cabbage and rice. Portion remaining shredded pork with a little liquid and freeze for future meals. This is also good as a pulled pork sandwich or with added barbecue sauce.

Tips:

  • Choose the right cut of pork: Pork shoulder (also known as pork butt) is the best cut for kalua pork. It's a fatty, flavorful cut that will hold up well to the long cooking process.
  • Use a flavorful rub: A good rub will help to create a delicious crust on the pork. Some popular ingredients for a kalua pork rub include Hawaiian salt, garlic powder, onion powder, paprika, and cumin.
  • Cook the pork low and slow: Kalua pork is traditionally cooked in an underground oven, but you can also cook it in a slow cooker or oven. The key is to cook it low and slow so that the pork has time to become tender and flavorful.
  • Shred the pork: Once the pork is cooked, shred it with two forks. This will make it easier to serve and eat.
  • Serve with traditional sides: Kalua pork is traditionally served with cabbage, poi, and haupia. However, you can also serve it with your favorite sides, such as rice, macaroni salad, or coleslaw.

Conclusion:

Kalua pork is a delicious and versatile dish that can be enjoyed by people of all ages. It's perfect for a party or a casual meal. With a little planning, you can easily make kalua pork at home. So what are you waiting for? Give it a try today!
