Steps:
- 1. Shred or mince cabbage, carrots and onions very fine, to size of a grain of rice.
- 2. Mix mayo, sugar, milk, buttermilk or sour cream, lemon juice, white vinegar, salt and pepper until smooth.
- 3. Add sauce to the well mixed and well distributed cabbage, carrots and onion. Stir and incorporate well.
- 4. Place in refrigerator and allow at least 2 hours before serving. Best if allowed to set in fridge overnight.
- 5. Note: A food processor works best for mincing the veggies. The alternative is the smaller holes of a handheld shredder. Yields about a quart and a half.
- 6. As I noted, much of the appeal of KFC's slaw is the texture as well as the flavor. Enjoy!
Tips:
- Using a sharp knife or a mandoline slicer will help you achieve thin, even slices of cabbage and carrots, resulting in a more cohesive slaw.
- If you want a creamier coleslaw, add an extra 1/4 cup of mayonnaise or sour cream.
- For a tangier slaw, increase the amount of vinegar or lemon juice to your taste.
- If you like a sweeter slaw, add a tablespoon of sugar or honey.
- To add some crunch, top the slaw with chopped nuts or crumbled bacon.
- For a healthier version, use Greek yogurt instead of mayonnaise.
- If you're making the slaw ahead of time, wait to add the dressing until just before serving to prevent the cabbage from getting soggy.
- Serve the slaw chilled for the best flavor and texture.
Conclusion:
With its creamy, tangy dressing and crunchy cabbage and carrots, KFC Creamy Coleslaw is a classic side dish that pairs perfectly with fried chicken, burgers, and grilled meats. Whether you're following the original KFC recipe or trying one of the many variations, you're sure to find a slaw that you'll love.
