GRAMFLOUR PANCAKES (BESAN KA PURA/ CHILA)
This a very healthy breakfast especially if you on a diet. An Indianised pancake tastes really good!

Steps:
- Mix all the above ingredients together except oil and make a smooth paste of spreadable consistency (some people like the paste to be thick--Iprefer it kind of watery) let mixture rest for 5 minute.
- Heat very little oil in a non-stick pan.
- Beat the mixture once again.
- Drop by a small ladle and spread as pancakes.
- Don't drop a lot of mixture--try by making small pancakes.
- Place a flat spatula under the pancake to avoid sticking to the pan and flip after about 10 seconds.
- Add little oil if needed.
- Roast until golden brown on both sides.
- Can be eaten just like this with tomato ketchup, or can be eaten with buttered slices of bread.

My family love Indian, food this is one that I have made for years and I just love it on it's own with nan bread, or you can use this as a side dish or with rice. It's very versatile, you can make it thick or thin depending on your taste, we like it very hot but for this recipe I have only used 1/2 teaspoon of chilli powder but you can use a bit more if you like. This serves 4 as a side dish but if it is served as a dish on it's own I would say that it serves 2

Steps:
- Wash mushrooms and cut them in quarters.
- Heat the oil on a medium heatand add the garlic.
- Allow the garlic to turn slightly brown and add the mushrooms.
- Stir and and cook for 2 minutes.
- Add the salt, chilli and coriander stir and cook for 1 minute.
- Add the lemon juice and mix well.
- Sprinkle the flour over the mushroom mixture, stir and mix immediately.
- cook for a few seconds then add water mix well till you have a nice sauce.
Tips:
- Soak the khumbi (mushrooms) for at least 30 minutes before cooking to soften them.
- Use a sharp knife to thinly slice the khumbi to ensure even cooking.
- Add a squeeze of lemon juice to the khumbi mixture to prevent it from browning.
- Toast the besan (chickpea flour) in a pan over low heat until it turns golden brown to enhance its flavor.
- Adjust the amount of water added to the besan mixture to achieve the desired consistency.
- Garnish the khumbi aur besan ki bhuji with fresh coriander leaves for added flavor and color.
