- For the cakes: Preheat the oven to 350 degrees F. Spray a 12-cup mini loaf pan with cooking spray.
- Spread the pecans out on 1 side of a rimmed baking sheet, the coconut on the other, and bake until both are toasted, 5 to 7 minutes. Let cool, then finely chop the pecans.
- Combine the flour, baking powder, baking soda, cinnamon, ginger and salt in a large bowl. Whisk together the butter, sour cream, brown sugar, vanilla and eggs in another large bowl. Stir the carrots, pecans and coconut into the egg mixture. Fold the flour mixture into the carrot-egg mixture until just combined. Divide evenly among the prepared pans (about 3 heaping tablespoons of batter per loaf). (Don't be alarmed if the batter seems skimpy; the cakes will rise once baked.)
- Bake until the center of a cake bounces back when pressed and a toothpick inserted in the middle comes out clean, 20 to 22 minutes. Let the cakes cool in the pan for a few minutes, then transfer to a rack to cool completely.
- For the glaze: Mix together the confectioners' sugar, cream cheese, lemon juice and salt in a medium bowl. Top each loaf with about 1 tablespoon of the glaze, and spread evenly with the back of the spoon.

- In 6-inch skillet, heat oil over medium heat. Add garlic; cook, stirring frequently, until garlic just begins to brown. Remove from heat.
- In large bowl, mix 2 cups of the flour, the sugar, salt and yeast. Add very warm water and garlic with oil. Beat with electric mixer on medium speed 3 minutes, scraping bowl occasionally. Stir in cheese and enough remaining flour to make dough easy to handle.
- On lightly floured surface, knead dough 5 to 10 minutes or until dough is smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in warm place 1 hour to 1 hour 30 minutes or until dough has doubled in size.
- Grease large cookie sheet with shortening or cooking spray. Gently push fist into dough to deflate. Divide dough into quarters. Shape each quarter into 6-inch round. Place each round with smooth side up on corner of cookie sheet. Cut 1/2-inch-deep slash in top of each round with serrated knife. Cover loosely with plastic wrap; let rise in warm place about 30 minutes or until dough has doubled in size.
- Heat oven to 375°F. Remove plastic wrap. Bake 20 to 25 minutes or until golden brown. Remove from cookie sheet to cooling rack; cool if desired.

- In a large bowl, combine the ketchup, brown sugar and mustard and mix well. Remove 4 tablespoons of this mixture and reserve for later for the top of the loaves. To the mixture in the bowl, add the Worcestershire sauce, salt, onion, garlic, egg, milk and ground black pepper and mix together well.
- Stir in the wheat cereal squares and let stand for 5 minutes. Then break up the cereal squares and add the ground beef, mixing well. Shape the mixture into the mini loaf pans you've decided to use.

- Split hot dog buns open and lay on cookie sheet (crust side to the cookie sheet).
- Spread butter on open side of each hot dog bun.
- Sprinkle with garlic.
- Place in 350 degree oven and bake until top side of bun is very lightly browned or until butter (and cheese-if added) is melted. Check often.
