Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 8

1 1/2-2 lbs of smoked kielbasa
1 bag small shell pasta or 1 bag elbow macaroni (any pasta shape can be used)
1 onion, diced (more or less to desired taste)
1 green peppers or 1 red pepper, diced (my family prefers green pepper)
1/2 package cubed Velveeta cheese (or 1 cup of your cheese of choice....we prefer Velveeta because it's creamier)
1/2 cup milk or 1/2 cup water
2 tablespoons butter or 2 tablespoons olive oil
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees.
  • Cook the Pasta as directed on package.
  • Drain and pour into large Oven-Safe Casserole dish.
  • In a large skillet, saute the diced onion and pepper in 2 Tbsp of butter or Olive Oil.
  • Slice the smoked sausage links into small pieces and add to the skillet with the onion and pepper.
  • When the sausage is browned (most smoke sausages are precooked, so it shouldn't take more than a few minutes to brown).
  • add the contents of the skillet (sausage, pepper and onion) to the pasta in the Casserole Dish.
  • Mix well.
  • Add the cubed or shredded cheese.
  • Add the 1/2 cup milk or water to the mixture.
  • Salt and Pepper if desired.
  • Stir well.
  • Bake in a 350 degree oven for 30-40 minutes (or until it all melts together).
  • I usually serve with Boiled or Mashed potatoes, Saurkraut and Hot Rolls on the side.
  • YUMMY!
  • and believe it or not-- the kids LOVE IT!

Time 1h

Yield 9-10 serving(s)

Number Of Ingredients 14

2 tablespoons butter
6 green onions, chopped
1/2 cup fresh mushrooms, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon horseradish
1/8 cup fresh parsley, chopped
2 cups swiss cheese, shredded (8 oz)
8 ounces wide egg noodles, cooked and drained
1/2 cup milk
1 lb kielbasa or 1 lb smoked sausage, cut into bite size pieces
1 lb fresh broccoli, cleaned, cut into spears
3 large carrots, cleaned, peeled, cut into 1 1/2 inch pieces
6 medium red potatoes, quartered

Steps:

  • In frying pan, melt 1 tbsp butter and sauté onions and mushrooms until tender.
  • Add salt, pepper, horseradish and parsley.
  • In medium bowl, mix together onions, mushrooms, 1 1/2 cups cheese, noodles, and milk.
  • Spoon into a buttered 13x9-inch baking dish.
  • Sauté kielbasa in remaining tablespoon of butter for about 5 minutes.
  • Arrange kielbasa in center of noodles in baking pan.
  • Cook vegetables until just tender and arrange around the kielbasa.
  • Sprinkle remaining cheese over vegetables.
  • Bake at 375°F for 15 minutes or until cheese is melted and casserole is heated through.

Tips:

  • Choose the right sausage: Kielbasa is a type of Polish sausage that is typically made with pork, but it can also be made with beef, lamb, or turkey. For this recipe, you can use any type of kielbasa that you like, but a smoked kielbasa will add a delicious smoky flavor to the casserole.
  • Slice the sausage thinly: This will help the sausage to cook evenly throughout the casserole. You can slice the sausage by hand or use a food processor fitted with the slicing blade.
  • Cook the sausage before adding it to the casserole: This will help to remove some of the fat from the sausage and prevent it from becoming greasy. You can cook the sausage in a skillet over medium heat or in the oven at 350 degrees Fahrenheit for 10-15 minutes.
  • Use a variety of cheeses: This will give the casserole a more complex flavor. You can use any type of cheese that you like, but cheddar, mozzarella, and Parmesan are all good choices.
  • Don't overcook the casserole: The noodles should be cooked al dente and the cheese should be melted, but not browned. Overcooking the casserole will make the noodles mushy and the cheese rubbery.

Conclusion:

Kielbasa Cheesy Noodle Casserole is a quick and easy meal that is perfect for a weeknight dinner. It is made with simple ingredients that you probably already have on hand, and it is sure to be a hit with the whole family. So next time you are looking for a delicious and easy meal, give this casserole a try!
