  • Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a lasagna-size casserole dish with cooking spray.

4 ounce (1 sticks or 1/2 cup) unsalted butter, or a combinator of peanut oil and chicken schmaltz to equal same
2 large (1 pound) yellow onions, chopped (about 2 cups)
12 ounce (3/4 pound) mushrooms, button, portobello, romano, or a combination, sliced or chopped
2 teaspoon kosher salt plus more to taste
3/4 teaspoon freshly ground black pepper plus more to taste
1 large egg (optional)
1/4 cup soup stock, chicken or vegetable (optional)
1 tablespoon unsalted butter (optional)

Steps:

  • Bring a large pot of salted water (4 quarts water with 1 tablespoon kosher salt) to a boil. Add the toasted farfel and cook until tender, about 10 minutes. Drain, but do not rinse. In a large saucepan, heat the butter or shmaltz mixture (based on if you want it meat or dairy). Add the onions and saute until translucent, 7 to 8 minutes. Add the mushrooms, salt and pepper and continue cooking, stirring often, until the mushrooms have given off most of their water and the mushrooms and onions are soft, about 30 minutes. 3 cups Homemade Chicken Stock
3 cups farfel
1/4 pound white button mushrooms, sliced
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat 2 tablespoons oil over medium-low heat. Add onions, and cook, stirring frequently, until soft and caramelized, 30 to 45 minutes.
  • In a medium saucepan, bring chicken stock just to a simmer over medium heat. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add farfel, and cook, stirring, until toasted and golden brown, about 5 minutes. Transfer to a small roasting pan, and add hot stock. Place in oven, and bake until the liquid is absorbed, about 20 minutes.
  • Meanwhile, heat remaining 2 tablespoons oil in a large skillet; add mushrooms, and cook, stirring occasionally, until mushrooms are golden brown and all the released liquid has evaporated, 5 to 7 minutes.

12 button mushrooms, brushed off with damp towel and chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup whole milk or cream
1/8 teaspoon nutmeg, freshly grated or ground
Salt and pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 shallot, thinly sliced
2 portobello mushroom caps, halved and thinly sliced
1/2 pound fresh mixed wild mushrooms, shitakes, oyster, woodear, your pick, stems trimmed and caps thinly sliced
1 tablespoon fresh thyme, 4 sprigs, finely chopped
Salt and pepper
1/3 cup dry white wine, eyeball it or, more stock
1 pound extra-wide egg noodles
Butter
3/4 pound Gruyere or Swiss Emmentaler cheese, shredded
3 tablespoons chives, 12 to 15 blades, chopped

Steps:

  • Bring a large pot of water to a boil for the egg noodles.
  • Heat a medium sauce pot over medium heat. Add extra-virgin olive oil, 1 turn of the pan, about 1 tablespoon, and 2 tablespoons butter. When butter melts, add in chopped button mushrooms and cook 5 minutes, until just tender. Sprinkle in a couple of tablespoons flour and cook 1 minute. Whisk in chicken stock and bring to a bubble then stir in the whole milk or cream. Reduce heat to low and gently simmer. Season the sauce with nutmeg, salt and pepper.
  • Heat a nonstick skillet over medium-high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan then the shallots and mushrooms. Cook the mushrooms 8 minutes, until tender. Season with thyme, salt and pepper and deglaze the pan with 1/3 cup dry white wine or a little stock. Reduce heat to medium low and let the liquid cook off.
  • Preheat broiler to high.
  • While the mushrooms cook, drop egg noodles in water, salt the water and cook noodles to al dente, with a bite to them. Drain noodles and return to hot pot. Add the sauce to the pot and toss noodles to coat in sauce.
  • Lightly cover a flameproof casserole dish with softened butter then transfer cream of mushroom noodles to the casserole dish and top with wild mushroom ragout and the shredded cheese. Place the casserole under the broiler and melt and bubble the cheese until brown at edges. Garnish with chives.

1/2 pound cremini mushrooms
3 tablespoons extra-virgin olive oil
1/2 cup chopped red onion
3 cloves garlic, minced
1 cup beef or mushroom stock
1 teaspoon rosemary, preferably fresh
Salt and freshly ground black pepper
1/2 pound farfalle (bow tie) pasta
1/4 cup dry bread crumbs
1 cup shredded smoked mozzarella

Steps:

  • Slice the head of radicchio in half lengthwise, remove the core, then coarsely shred the radicchio. Rinse and slice the mushrooms.
  • Heat two tablespoons of the oil in a heavy skillet. Add the onion and saute until it is tender. Stir in the garlic. Add the sliced mushrooms and cook over medium-low heat until they wilt. Leave as much of the mushroom juice as possible in the pan. Stir in the radicchio and rosemary. Cover the pan and cook until the radicchio wilts. Season to taste with salt and pepper and set aside.

6 eggs
4 teaspoons salt
1/4 teaspoon black pepper
3 cups boiled water
8 large onions, sliced
4 stalks celery
1 cup vegetable oil
6 dashes teriyaki sauce
1 (4 ounce) jar mushrooms

Steps:

  • Mix matzoh farfel, eggs, salt, and pepper in a large bowl. Let stand 2 to 3 hours. Break apart to look like popcorn.
  • Saute onions, celery, and mushrooms in oil. Add teriyaki sauce into pan and fry until golden brown. Stir frequently.

1/4 c olive oil, divided
4 c Manischewitz matzo farfel
2 c finely chopped onions
3 c finely chopped mushrooms
1/4 c coarsely chopped carrots
1/3 c sliced celery
1/2 c diced green pepper
1 clove garlic, crushed
2 10 1/2 cans condensed clear chicken soup
1/4 t black pepper

Steps:

  • 1. Heat 1 T oil on large frying pan, over medium high heat. add matza farfel and stir constantly until lightly toasted. Remove from pan, and set aside. 2. Wipe pan with dry paper towels, if necessary, to remove crumbs. 3. Pour remaining oil into pan and add onions; saute over medium heat until golden brown, stirring occasionally. Add mushrooms and saute 5 minutes longer. Stir in carrots, celery , green pepper and garlic; cover pan and lower heat. Simmer for 5 minutes. 4. Stir in soup and black pepper.
