TOP SHELF GUACAMOLE (CANTINA LAREDO'S)
About a week ago I went to lunch at Cantina Laredo's and tried their table side prepared guacamole, which I normally don't eat the guacamole, not a fan, but just loved this one. They start out with lime juice, then add the seasonings and then the diced avocado. Then they give you the option of adding all the remaining ingredients (onions, tomatoes, cilantro and jalapenos). I wasn't the one ordering this, so they added all but the onions and jalapenos. There were several news videos (from different cities) on youtube.com to watch them make it, so I am including a link. This one is not a news station but actually from Cantina Laredo: http://www.youtube.com/watch?v=bSte45AvS6g.

Steps:
- Using a fork, place it in the middle of the 1/2 lime and squeeze (turning fork) to get the juice in to the bowl. Add the sea salt, white pepper and granulated garlic and stir to combine.
- Cut avocado in half and remove the seed.
- With a dinner knife, score the avocado every ½ inch, turning knife length-wise and cross-wise to form ½-inch squares.
- Taking each avocado half, place a bouillon spoon between the skin and the pulp. Remove the pulp and place into the mixing bowl.
- With two forks, mash the avocados to make a chunky paste.
- Next add the onion, cilantro, jalapenos and mix to combine. Last, add the tomatoes.
- Serve with chips and enjoy!

LA CASITA'S GUACAMOLE
This is a guac that was served at a local restaurant. I was not a guacamole lover because I find that they were sour and I was not a fan of tomatoes in mine. That is why I fell in LOVE with this guacamole. The restaurant was owned by a family whose mother ran the kitchen and she came from Mexico and made authentic food. The place has been sold and the new owners still have a lot of the same recipes. Before they sold the place, I asked for the recipe and was shocked at how easy it was and uncomplicated.

Steps:
- Pit and slice avocados in the skin then using a spoon scoop out avacado into a bowl.
- Add grated onion, salt and water.
- Mash all together. Or you can put all into a small food processor and blend together.
- To keep from turning dark brown when covering make sure plastic wrap is on top of the mixture. If it does turn dark brown it is not spoiled it has just oxidized. Stir in and use.
- Will keep for a day or 2 in the fridge. If it last that long.

Tips:
- Select ripe avocados: Use ripe avocados that yield to gentle pressure when squeezed. Avoid avocados that are too hard or have dark spots.
- Use fresh ingredients: Fresh ingredients like cilantro, lime juice, onion, and tomatoes add a vibrant flavor to guacamole. Choose high-quality ingredients for the best taste.
- Adjust the spiciness: If you prefer a spicy guacamole, add more jalapeño or cayenne pepper. For a milder version, reduce the amount of spice or omit it altogether.
- Don't over-mash the avocados: Guacamole should have a slightly chunky texture, so avoid over-mashing the avocados. Use a fork or potato masher to gently mash them until they reach your desired consistency.
- Serve immediately: Guacamole is best enjoyed fresh, so serve it immediately after making it. If you need to store it, cover it tightly and refrigerate for up to 2 days.
Conclusion:
With its creamy texture, vibrant flavors, and versatility, guacamole is a beloved dish enjoyed by many. Experiment with different ingredients and techniques to create your perfect guacamole recipe. Whether you prefer it classic or with a twist, this delicious dip is sure to be a hit at any gathering. So grab some ripe avocados and start creating your own homemade guacamole masterpiece!
