LAMB CHOPS AND POTATOES WITH OLIVES, TOMATOES AND FETA CHEESE

Lamb Chops and Potatoes With Olives, Tomatoes and Feta Cheese image

A wonderful dish--simple, delicious comfort food. I seared the lamb chops in a hot skillet coated with a little olive oil before adding them to the potatoes in the oven (reducing roasting time accordingly) and scattered chopped flat-leaf parsley along with the olives, tomatoes and feta to add some color. Recipe adapted from Bon Appétit.

Tips:

  • Choose high-quality lamb chops: Look for chops that are a deep red color with a thin layer of fat. Avoid chops that are pale or have a lot of marbling.
  • Marinate the lamb chops before cooking: This will help to tenderize the meat and infuse it with flavor. You can use a variety of marinades, but a simple one made with olive oil, garlic, and rosemary is a good place to start.
  • Cook the lamb chops over high heat: This will help to create a nice crust on the outside while keeping the inside juicy. You can cook the chops in a skillet, on a grill, or even in the oven.
  • Don't overcook the lamb chops: Lamb chops are best when they are cooked to medium-rare or medium. If you cook them too long, they will become tough and dry.
  • Serve the lamb chops with a variety of sides: Roasted potatoes, grilled vegetables, or a simple salad are all good options.

Conclusion:

Lamb chops are a delicious and versatile cut of meat that can be cooked in a variety of ways. By following these tips, you can cook lamb chops that are juicy, flavorful, and perfectly cooked. So next time you're looking for a special meal to impress your friends or family, give lamb chops a try!
