LAMB SHANK WITH LIMA BEANS IN THE FRENCH STYLE

Lamb Shank With Lima Beans In the French Style image

Provided by William L. Hamilton

Categories     dinner, casseroles, main course

Time 2h30m

Yield 4 servings

Number Of Ingredients 12

1 pound dried baby lima beans
4 small lamb shanks
6 tablespoons olive oil
1/3 cup water
2 medium shallots, chopped
4 cloves garlic, chopped
2 tablespoons brandy or grappa
2 cups good tinned whole tomatoes, drained and chopped
1 bay leaf
2 tablespoons fresh thyme leaf
4 cups white wine
Salt and pepper to taste

Steps:

  • To reconstitute the dried beans, soak them overnight or bring them to a boil in a pan of water, remove from heat, let soak two hours, then drain.
  • Preheat the oven to 325 degrees.
  • Heat 4 tablespoons of the oil in a large saute pan. Over medium-high heat brown the lamb on all sides, and set aside. Drain the fat, and deglaze the pan with the water. Set the liquid aside.
  • In a large, heavy ovenproof casserole, saute the chopped shallots in the remaining 2 tablespoons of oil over a low-medium heat, until translucent. Add garlic; saute for another minute. Add the brandy or grappa and the tomatoes; cook over low heat for five minutes. Add the bay leaf and thyme.
  • Arrange the lamb in the pan, meatier side down, add the drained beans, add the deglazing liquid from the browning pan, and pour in the wine. Bring slowly to a simmering boil; reduce the heat to a simmer, and simmer five minutes.
  • Cover and bake in the oven for two hours, or cook on top of the stove for two hours, checking periodically that the liquid is at a simmer, not a rolling boil.
  • Serve one shank to a person with a cup of beans and liquid.

2 small onions, trimmed and quartered (do not peel)
1/2 cup fresh thyme sprigs
1/2 cup fresh rosemary sprigs
1/2 cup dry white wine

Creamed spinach

Special Equipment
a ricer

  • Prepare lamb:
  • Preheat oven to 450°F.
  • Put lamb shanks in a large metal roasting pan, then rub with oil and season with salt and pepper. Arrange onion wedges around lamb. Roast lamb in middle of oven 40 minutes. Turn shanks over, scatter with herb sprigs, and roast 40 minutes more.

  • Prepare potatoes and boil carrots while lamb roasts:

Make swirl patterns on surface of potatoes with back of spoon, then drizzle with melted butter.

FIVE SPICE LAMB SHANK WITH TAMARIND AND GINGER

Five Spice Lamb Shank With Tamarind and Ginger image

This is a very healthy, yet delicious recipe. It is an alternative way to do lamb shanks other than in red wine and beef stock with herbs and vegetables. It is also low in fat and carbohydrates. You can up the carbs by serving this with steamed basmati rice if desired, I just served it with bok choy and gai larn (also known as Chinese broccoli).

Provided by The Flying Chef

Categories     Lamb/Sheep

Time 3h20m

Yield 4 serving(s)

Number Of Ingredients 17

4 lamb shanks, or
8 french trimmed lamb shanks (these are smaller in size therefore you will need 2 per person)
1 cinnamon stick
1 teaspoon dried chili pepper flakes
1 1/2 teaspoons five-spice powder
2 star anise
1/2 cup chinese rice wine
50 ml soy sauce
2 tablespoons tamarind paste (I use TRS brand)
2 1/2 tablespoons brown sugar
3 teaspoons fresh ginger, grated
3 garlic cloves, chopped coarsely
1 cup water
600 g bok choy, ends chopped off
350 g gai lan, trimmed
1 1/2-2 teaspoons cornflour
1 tablespoon brown sugar, extra

Steps:

  • In a small heated fry pan, dry-fry chili, cinnamon, five spice and star anise, stirring, until fragrant.
  • Combine spices with rice wine, sauce, tamarind, sugar, ginger, garlic and water in a medium jug.
  • Place lamb in a baking dish and pour spice mixture over, cover dish with foil. You will bake lamb the entire time covered, just opening to turn lamb occasionally.
  • Bake in oven 1 1/4 - 1 1/2 hours at 100°C, then turn up oven to 150°C and bake for a further 1 - 1 1/4hour, finally turn oven up to 180°C and bake for 30 minutes to 1 hour until lamb is falling off the bone.
  • Boil or steam bok choy and gai larn separately until tender and drain.
  • When lamb is done remove and wrap in foil to keep warm. Strain liquid into a saucepan and bring to boil over a medium heat. Add a little water to cornflour and add to sauce, stir until mixture thickens.
  • I stated in ingredients 1 tablespoon, extra, of brown sugar, I have made this several times and sometimes I find it is fine as is and other times I find I need to add the extra sugar, so just taste test to see if you need this.
  • This is a great recipe because once you have made the spice mixture to pour over lamb, that is just about it, you can just leave it to cook, with the only thing to remember, to turn the oven up at required times. The lamb comes out perfect every time so juicy and tender.
  • To serve: Place a mound of steamed vegetables on plate, place lamb shank on top and drizzle sauce over.
  • As I stated earlier to up carbs just serve with some steamed basmati rice.

  • Serve ragù over grits and top with shavings of cheese.

LAMB SHANK STEW WITH RUSSET POTATO TOP

Lamb Shank Stew with Russet Potato Top image

Provided by Tyler Florence

Categories     main-dish

Time 3h

Yield 4 to 6 servings

Number Of Ingredients 20

1 cup all-purpose flour
Kosher salt and freshly ground black pepper
3 lamb shanks (about 8 ounces each), cut in 1/2
Extra-virgin olive oil
4 cloves garlic, chopped
4 large carrots, cut into coins
1 large onion, cut into chunks
1 bay leaf
1/4 bunch thyme
2 cloves
3/4 bottle (750ml) red wine
1 quart low-sodium beef stock
1 cup barley
6 large russet potatoes
Parsley sprigs, for garnish
10 cloves garlic, minced
1 tablespoon olive oil
Kosher salt
1/2 bunch flat-leaf parsley, leaves chopped
1 stick unsalted butter

Steps:

  • Preheat oven to 350 degrees F.
  • Begin by preparing shanks: On a large plate, season flour with plenty of salt and pepper then lightly dredge the shank pieces. Set a large, heavy-based pot or Dutch oven over medium-high heat. Add a 2-count of olive oil then carefully add the shanks to the pot and brown all over. Remove the shanks to a plate and set aside. Toss in the garlic, carrots, onion, bay leaf, thyme and cloves. Cook for 2 to 3 minutes, browning the vegetables, then add wine, beef stock and finally barley. Return the shanks to the pan. Cover and roast in the oven for 2 hours.
  • While they are cooking, prepare the potato crust and Garlic-Parsley Butter: Chop garlic, drizzle with olive oil and sprinkle with salt. Press and mash the garlic with the flat blade of your knife to form a paste. Fold in the chopped parsley. Melt the butter in a small sauce pot and add the garlic-parsley mixture. Cook over low heat for 5 minutes and set aside. Peel the potatoes and cut in half lengthwise.
  • After the stew has been cooking for 2 hours, remove from oven and arrange potatoes on top to completely cover the stew - you may have to cut some of the potato pieces smaller to fit. Place back in the oven uncovered and bake for 30 to 45 minutes or until the potatoes are cooked, then baste with garlic-parsley butter.
  • Serve the stew garnished with parsley sprigs.

LAMB SHANK ROGAN JOSH

Lamb Shank Rogan Josh image

This rogan josh recipe is a result of my having prepared Lene's version (recipe #124635) and having made many tweaks in the ingredients and method. I hope you find it as useful and delicious as my family has! The meat is so tender and the sauce goes so well with other Indian dishes, it's one of our favorites.

Time 3h10m

Yield 3-4 serving(s)

Number Of Ingredients 17

2 lbs lamb shanks (2)
1 1/2 tablespoons all-purpose flour
1 1/2 teaspoons chili powder
1/2 teaspoon ground coriander
1/4 teaspoon ground ginger
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground nutmeg
2 tablespoons vegetable oil or 2 tablespoons olive oil
1/2 large yellow onion, thinly sliced
2 celery ribs, chopped
1 cup hot lamb stock or 1 cup chicken stock
3/4 cup plain Greek yogurt or 3/4 cup sour cream
2 cardamom pods, cracked
1 teaspoon saffron strand
14 1/2 ounces stewed tomatoes (canned are fine) or 14 1/2 ounces crushed tomatoes, with juice (canned are fine)
1/2 cup tomato sauce (optional)

Steps:

  • With paper towels, gently pat any excess moisture from the lamb shanks. Set aside.
  • In a gallon-sized Ziplock or other bag, combine the flour, chili powder, coriander, ginger, cumin, salt and nutmeg. Add the lamb shanks and shake to dust the shanks in the mixture.
  • In a large dutch oven (I use my big, round Le Cruset pot), heat the oil over medium heat. Add the dusted lamb shanks from the bag. Reserve any remaining flour/spice mixture from the bag, setting it aside.
  • Brown the lamb on all sides for about 7 to 10 minutes, careful not to let the flour/spice mixture burn. Transfer the browned meat to a plate and set aside.
  • Add the thinly sliced onion and celery to the dutch oven and sauté for 5 to 7 minutes until the onion is golden brown. Add the reserved flour/spice mixture and cook for 1 minute, stirring continuously. Stir in the stock and yogurt until well mixed.
  • Return the browned lamb to the dutch oven, turning the shanks so that they're covered in sauce. Add the cracked cardamom pods and saffron and bring to a gentle boil. Cover tightly with dutch oven lid and cook at medium low for 90 minutes.
  • Add the tomatoes (and tomato sauce, if you feel the there's not enough liquid in the pot) and cook for an additional 40 to 60 minutes until the lamb is tender and falling away from the bone.
  • Separate the meat from the bone/fat/gristle and serve with the sauce (which I prefer to put through a gravy-fat separator, first).
  • Serve hot with rice and naan. Saag aloo or curried lentils also go well with this dish!
  • Note: make sure your spices aren't stale or the flavorings in this dish simply won't be nearly as delicious.

DISNEY'S EPCOT WORLD SHOWCASE MOROCCAN ROAST LAMB SHANK MESHOUI

Disney's Epcot World Showcase Moroccan Roast Lamb Shank Meshoui image

Fork tender lamb shanks in a fragrant sauce with a subtle amount of spices. If you like it spicier, triple the amount of turmeric, paprika, cumin, and ginger. Restaurant Marrakesh's best dish in Walt Disney World's Epcot. You can ask any Disney restaurant for a recipe, and the chef will give it to you.

Time 5h15m

Yield 4 shanks, 4 serving(s)

Number Of Ingredients 25

4 lamb shanks
olive oil, for browning
salt, to taste
1/2 teaspoon black pepper
1 onion, chopped
1 tablespoon olive oil
3 tablespoons unsalted butter
1 stalk celery, finely sliced
1 carrot, finely sliced
1 red bell pepper, finely chopped
4 garlic cloves, minced
1 (16 ounce) can diced tomatoes, not drained
1 teaspoon ground turmeric
1 teaspoon ground paprika
1 teaspoon ground cumin
1 teaspoon ground ginger
1/2 teaspoon saffron
salt, to taste
1 quarter preserved lemons or 1 quarter fresh lemon
1 tablespoon capers
1 1/2 teaspoons brown sugar
1 -2 cup water
3 medium zucchini, quartered lengthwise and then cut in 2 inch long pieces
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh cilantro, finely chopped

Steps:

  • Preheat oven to 350F degrees.
  • Sprinkle lamb with salt and black pepper. In a large skillet over medium heat, cook lamb in olive oil until brown on all sides. Transfer to a rectangular baking pan with 2 to 3 inch high sides. Set aside.
  • In the same skillet over medium heat, add 1 tablespoon olive oil, 3 tablespoons butter, onion, celery, carrots, bell pepper, and garlic. Brown vegetables in olive oil and butter, stirring occasionally. Stir in tomatoes including liquid, turmeric, paprika, cumin, ginger, saffron, salt, one lemon quarter, brown sugar, and water. Bring to a boil. Pour tomato mixture over browned lamb in baking pan.
  • Wrap pan tightly with aluminum foil. Bake at 350F for 4 hours or until tender.
  • Remove foil. Add zucchini, parsley, and cilantro and additional water if needed. Increase oven temperature to 400F degrees. Recover with aluminum foil. Bake for 45 minutes longer or until zucchini is tender.
  • Remove lemon quarter and serve.
  • OPTIONAL FINAL STEP: The final step that Restaurant Marrakesh performs before serving is removing the lamb and zucchini from the pan. Then, transfer leftover sauce and vegetables back to the skillet that was used to brown the lamb. Bring to a boil, and simmer the sauce until reduced a little on the stovetop. Then, strain the sauce, discard the vegetables, and serve sauce over the lamb and zucchini. I do not perform this final step because I like eating the onion, celery, carrot, and red bell pepper which have absorbed the flavorful spices.
  • Restaurant Marrakesh serves their Roast Lamb Meshoui with a side of Roasted Eggplant Purée, but I like mine over jasmine rice. Note: Restaurant Marrakesh serves two different roast lamb dishes. This is NOT their Couscous with Lamb Shank.
