LAURA'S GENERAL TSO'S SEITAN

Laura's General Tso's Seitan image

I got this recipe from Laura (aka "amorsalado" on LJ), and it's a great recipe she once cooked that her non-vegetarian husband told her she could make for him anytime. It convinced him of the tastiness of vegetarian food. :) She said, "This General Tso's recipe was what sold him, and it's so easy, too!"

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 lb seitan, in strips
1/2 cup soy sauce
1/2 cup distilled white vinegar
1/2 cup water
2 tablespoons sugar
1 garlic cloves, minced or 1 teaspoon minced garlic, to taste
1 teaspoon peeled and minced gingerroot
1 teaspoon cornstarch
1 large eggs or 1/4 cup egg white, beaten lightly
2 tablespoons vegetable oil
4 dried hot red chiles, seeded (and veins taken out, if you want extra heat removed)
cooked rice, for serving

Steps:

  • In a bowl combine the soy sauce, vinegar, 1/2 cup water, sugar, garlic, and ginger root.
  • In another bowl, combine the egg and cornstarch and dip the seitan pieces.
  • Heat the oil in a wok or deep, heavy skillet until very hot, add the seitan and fry it for 4 to 6 minutes, or until it is crisp-ish. (This was so much better after I finally broke down and bought a wok. It really does make a huge difference!).
  • Add the soy sauce mixture and the chile peppers and cook the mixture over moderately high heat for 2 minutes, or until heated through. (I usually bring the sauce to a boil after I've poured it on, and then reduce the heat to simmer until it's as thick as I want it. It takes about five minutes, because I like the sauce pretty thick.).
  • Serve with cooked rice and enjoy!
  • Laura says: "This is more than enough for the three of us with left overs the next day, and it's really yummy. I'm actually not much of a chef, so I tend to keep it simple and quick.".

GINGER BRAISED SEITAN

Ginger Braised Seitan image

A warm and hearty meal, full of ginger. I made this to mimic a non-vegetarian dish that a friend had in a Vietnamese restaurant. Serve it with rice to absorb all the juices.

Time 40m

Yield 2 serving(s)

Number Of Ingredients 12

10 ounces seitan
2 garlic cloves, chopped
2 tablespoons ginger, chopped
1 tablespoon olive oil
1 carrot, peeled and sliced
5 mushrooms, sliced
1 cup spinach
2 cups water or 2 cups stock
1 teaspoon sesame oil
1 tablespoon soy sauce
1 dash salt
1 teaspoon cornstarch (optional)

Steps:

  • Heat olive oil in saucepan. Add garlic and ginger and saute gently for one minute.
  • Add seitan and carrot, and saute until the seitan begins to brown.
  • Add mushrooms, water, sesame oil, soy sauce, and a dash of salt. Cover saucepan and bring to a boil. Turn the heat down low, leave the cover ajar, and cook slowly for 20-30 minutes, until the carrots are soft.
  • Stir the spinach into the broth. If desired, mix cornstarch with 2 teaspoons of cold water, and add to broth to thicken it. Cook uncovered for another minute until the spinach is cooked.
  • Serve hot.

Tips:

  • Prep Work: Before starting, make sure all your ingredients are prepped. Chop vegetables, whisk sauces, and marinate the seitan to save time during cooking.
  • Crispy Seitan: To achieve crispy seitan, double-coat it in cornstarch and fry it in hot oil. This will create a golden-brown, crunchy texture.
  • Sauce Consistency: For a thick and flavorful sauce, use a combination of soy sauce, rice vinegar, brown sugar, and cornstarch. Adjust the consistency by adding more cornstarch or water as needed.
  • Fresh Vegetables: Use fresh, crisp vegetables like broccoli, carrots, and bell peppers for a vibrant and colorful dish. Avoid frozen or canned vegetables, which can become mushy.
  • Garnish: Before serving, garnish your General Tso's Seitan with fresh scallions, sesame seeds, and chili flakes for an extra layer of flavor and visual appeal.

Conclusion:

With its crispy seitan, flavorful sauce, and fresh vegetables, this General Tso's Seitan recipe is a delightful plant-based take on the classic Chinese dish. By following these tips and using high-quality ingredients, you can create a delicious and satisfying meal that's perfect for a weeknight dinner or a special occasion. So, gather your ingredients, fire up your stove, and get ready to indulge in the irresistible flavors of General Tso's Seitan!
