1 9-by-12-inch lavash
2 tablespoons extra virgin olive oil
1 large garlic clove, minced
3 medium zucchini, thinly sliced (about 1 pound)

freshly ground pepper
1/2 cup (2 ounces) crumbled goat cheese
1 to 2 teaspoons chopped or slivered fresh mint leaves

Steps:

  • Heat the oven to 375 degrees, preferably with a baking stone in it.
  • Heat 1 tablespoon of the olive oil over medium-high heat in a large, heavy nonstick skillet. Add the zucchini. Cook, stirring or tossing in the pan, just until the zucchini begins to look translucent, about three minutes. Add the garlic and cook, stirring, for another 30 seconds to a minute until fragrant. Season with salt and pepper, and remove from the heat.
  • Place the lavash on a baking sheet. Sprinkle the goat cheese over the lavash. Arrange the zucchini on top in overlapping rows. Drizzle on the remaining olive oil, and place in the oven. 1/2 pound sturdy greens (kale or collards, or a mix)
1/4 pound baby broccoli tops
2 tablespoons extra virgin olive oil
1/4 pound mushrooms, sliced
2 large garlic cloves, minced
1 teaspoon minced fresh rosemary (optional)
Salt
freshly ground pepper
1/2 cup, tightly packed (2 ounces) grated Gruyère or fontina cheese
1 9-by-12-inch lavash

Steps:

  • Bring a large pot of generously salted water to a boil. Add the greens and the broccoli tops. Blanch for three minutes, then transfer to a bowl of ice water and drain. Squeeze out excess water and chop. Set aside.
  • Heat the oven to 375 degrees, preferably with a pizza stone in it. Heat 1 tablespoon of the olive oil over medium-high heat in a large, heavy nonstick pan. When the oil is hot, add the mushrooms. 1 soft lavash bread
3 tablespoons olive oil
1/2 cup minced pitted Kalamata olives
1 cup grated Monterey Jack cheese
1 3/4 cups crumbled feta cheese
1 1/2 cups sliced mushrooms
1 cup diced green bell pepper
1/2 cup diced red onion
1 cup diced seeded plum tomatoes

  • Preheat broiler. Place lavash on large baking sheet; brush with 1 1/2 tablespoons oil. Broil until lavash just begins to crisp, about 1 minute.

Olive oil
2 small Japanese eggplants, halved
Salt and freshly ground black pepper
Spicy Hummus, recipe follows
12 ounces crumbled feta cheese
Red Chile Oil, recipe follows
Chopped fresh mint, for garnish
1 1/2 cups dried chickpeas, cooked until soft
2 cloves garlic, chopped
1/4 cup tahini
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 lemon, juiced
1/2 cup to 3/4 cup olive oil
Salt and freshly ground pepper
3 tablespoons chopped parsley leaves
2 ancho chiles, stemmed and chopped
1 New Mexican red chili, stemmed and chopped
1 teaspoon chile de arbol powder
1 cup canola oil

Steps:

  • Preheat the grill to high. Brush the lavash with oil on both sides. Grill until golden brown on both sides. Brush the eggplant with oil and season with salt and pepper. Grill the eggplant, cut-side down, until golden brown. Turn the eggplant over and grill until just cooked through. Remove from grill and cut into 1/4-inch thick slices.
  • Spread the hummus over the bread, top with the eggplant, and then the feta. Grill, with the cover down for 2 to 3 minutes, or until cheese is melted. Remove from the grill, drizzle with the red chile oil and sprinkle with mint.
  • Put the chickpeas, garlic, and tahini in the work bowl a food processor. Pulse until it becomes paste-like, adding a few tablespoons of water, if needed. Add the cayenne, cumin, and lemon juice, and pulse again until combined. With the motor running, slowly add the olive oil until emulsified. Add the parsley and pulse until just combined. Season with salt and pepper, to taste. Transfer to a small bowl.
  • Place all ingredients in a blender and blend for 5 minutes. Strain into a small bowl.

I make this for my family all the time, and its so simple but so yummy! Even my little brother likes it, and he is picky!

1 lavash bread
3 tablespoons pizza sauce (however much you like)
1/3 cup pre-shredded mozzarella cheese (you might want more, im not a big cheese fan)
2 -3 slices deli turkey or 2 -3 slices ham

Steps:

  • Spread the pizza sauce on one side of the lavash.
  • crush turkey with fingers into very small crumble-like pieces, or dice on cutting bored. just make sure the pieces are very small.
  • In a bowl combine crushed turkey and mozzarella cheese, toss a little to make sure its all mixed up. If you wish you could also add pineapple, banana peppers, olives, etc.
  • Spread mixture evenly over lavash.
  • Put in toaster oven, on high for 8-11 minutes, or until the lavash gets crispy and the cheese melts.
  • You can cut it into little pieces, but I think it's more fun to just tear them off as you eat! :D.
