2/3 cup (135 grams) granulated sugar
2/3 cup (80 grams) powdered sugar
Zest from half of a lemon
2 large eggs
1 teaspoon vanilla extract
3 cups (360 grams) powdered sugar
1 cup (227 grams) unsalted butter, softened
Food coloring
2 cups (240 grams) powdered sugar
2 tablespoons (40 grams) corn syrup
2 1/2 tablespoons whole milk

Steps:

  • For the cookies: In a medium bowl, combine the flour, lavender, baking powder and salt and set aside.

  • Bake until the cookies are just thinking about starting to turn brown, start checking at around 12 minutes. Let cool on the baking sheets for 5 minutes and then transfer to a wire rack to cool completely.
  • Meanwhile, for the buttercream: In a stand mixer fitted with a paddle attachment or in a large bowl with an electric mixer, beat together the powdered sugar and butter until smooth. Divide the buttercream amongst individual bowls (I suggest 5 or 6) and stir food coloring into each. Transfer to pastry bags fitted with tiny round or star tips.
  • For the glaze: Whisk together the powdered sugar, corn syrup, milk, vanilla, salt and a few drops of food coloring, if using, until very smooth. You're going for the consistency of a thick glue. If it's too thick-- add a couple more drops of milk and if it's too thin-- add a few spoonfuls of powdered sugar.
  • Assemble the cookies: Dip the tops of each cooled cookie into the glaze, letting any excess drip off, and then place on a wire rack to dry. After a few minutes, once they're mostly dry to the touch (completely dry isn't necessary) you can go ahead and pipe on buttercream decorations. Go the freehand route or use cookie cutters to press indentations into the glaze which can serve as an outline for your decorations.

These buttery, shortbread-like cookies, called graybeh, have a particularly crunchy texture that comes from clarified butter. If you've never clarified butter, this recipe is a good place to start, and the process is extremely simple (though you do have to plan it several hours ahead). If you're not a lavender fan, feel free to leave it out. And for a more familiar flavor, substitute vanilla extract for the orange blossom water. These cookies keep well, so you can make them up to a week in advance.

1 3/4 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
12 tablespoons cold unsalted butter, cut into 1/2 cubes
1 egg yolk
1/2 teaspoon vanilla extract

Steps:

  • In a food processor , process the sugar, lemon zest and lavender until the sugar looks damp and the zest and lavender are fully incorporated, about 30 seconds. Whisk together the flour, baking soda and salt, then add to the sugar mixture; pulse to combine, about 10 1-second pulses.
  • Scatter the butter pieces over and pulse until the mixture resembles fine cornmeal, about 15 1-second pulses. In a measuring cup, beat together the lemon juice, egg yolk and vanilla. With the machine running, add the juice mixture in a slow stream (should take about 10 seconds) and continue processing until the dough forms into a ball, 10 to 15 seconds longer.
  • Turn the dough and any dry bits onto a clean work surface and gently gather into a ball. Working quickly, roll the dough into a cylinder about 12 inches; long and 1½" in diameter. 1/2 c butter, softened
1 c granulated sugar
2 eggs
1 tsp lavender, crushed
1 1/2 c flour
2 tsp baking powder
1/4 tsp salt
ICING:
2 c powdered sugar
5 1/2 tsp water
6 1/2 tsp rose water

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Cream butter and sugar, add eggs, lavender, flour, baking powder and salt, blend well.
  • 3. Drop by teaspoons onto ungreased cookie sheet. Bake about 8 to 10 minutes.

3 tablespoons dried lavender
3/4 cup granulated sugar
2 sticks unsalted butter, at room temperature
1/4 cup confectioners' sugar
1/2 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
2 large egg yolks
2 cups all-purpose flour
4 ounces white chocolate, finely chopped
2 tablespoons half-and half
Assorted purple sprinkles, for topping

Steps:

  • Make the cookies: Pulse the lavender in a spice or coffee grinder until finely ground. Remove 1/4 teaspoon to a small bowl; set aside for the glaze. Add 1/4 cup granulated sugar to the remaining lavender in the spice grinder and pulse until the sugar is fine.
  • Combine the butter, lavender sugar, the remaining 1/2 cup granulated sugar, the confectioners' sugar, salt and vanilla in a large bowl and beat with a mixer on medium-high speed until fluffy, about 2 minutes. Add the egg yolks and beat, scraping down the sides of the bowl, until combined, about 1 minute. Reduce the mixer speed to low; add the flour and beat until the dough comes together, 1 to 2 minutes.
  • Divide the dough between 2 large sheets of plastic wrap and roll each into a compact 10-inch log. Wrap each log in the plastic and refrigerate until very firm, at least 2 hours and up to 1 day.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees. Line 2 baking sheets with parchment paper. Unwrap one log of dough and slice into 3/8-inch-thick rounds. Arrange 2 inches apart on the prepared baking sheets.
  • Bake, switching the pans halfway through, until the cookies are golden around the edges, 20 to 24 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely. Repeat with the remaining log of dough.
  • Make the glaze: Combine the white chocolate, half-and-half and the reserved 1/4 teaspoon ground lavender in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water); stir until melted, about 5 minutes. Remove the bowl from the saucepan and let sit until the glaze thickens slightly, 5 to 10 minutes. (If the glaze gets too thick to drizzle, reheat over the simmering water, stirring.) Drizzle the glaze over the cookies and top with sprinkles. Let set, about 2 hours.

A British friend made these for me when I visited her in 1999 and I've been making them every since. They are very buttery and spread like crazy while baking, but you can almost hear the bees buzzing on the lavender when you try one. I kept the recipe to myself for quite a while and only shared it with another friend when she remarked how good they were. Now, they are a standard in HER home and a perennial favourite at her church's bake sale! Very good when served with a cuppa hot tea, especially Earl Grey. And please don't be tempted to add salt or vanilla extract; this is just a plain buttery lavender cookie.
