2 tablespoons butter
1 large sweet onion, diced
1 ½ pounds lean ground beef
4 cups water
1 head cabbage, cut into bite-size pieces
1 (28 ounce) can tomato puree
2 (10.75 ounce) cans condensed tomato soup
1 cup long-grain brown rice
2 cubes beef bouillon
salt and ground black pepper to taste

Steps:

  • Heat butter in a skillet over medium heat; cook and stir onion until tender, 5 to 10 minutes. Add ground beef; cook and stir until beef is browned and crumbly, 5 to 10 minutes.
  • Combine water, cabbage, tomato puree, tomato soup, rice, beef bouillon, salt, and pepper in a slow cooker; add ground beef mixture.
  • Cook on High for 8 hours.

A really quick fine-dining type recipe! The approximate American weights are given in brackets. You can assemble this soup a day ahead, and keep it in the fridge to heat gently just before serving. Please adjust to your taste. Use the best quality canned mushroom soup and smoked oysters -- it makes a big difference to the end result. It IS rich, no excuses, but is served in very small portions -- not as generous as my photo seems to indicate! PS: I think that 2 cans of oysters might be better than just one and will improve the flavour. If you find the cup of cream too much, use a 1/2 cup plus 1/2 cup chicken broth (or more mushroom soup).

400 g mushroom soup (best quality, 14 oz)
105 g smoked oysters (best quality, 3 1/2 oz can, or increase to 2 cans)
250 ml fresh cream (1 generous cup, or use 1/2 cup cream and 1/2 cup chicken broth)
5 tablespoons dry sherry
1 -2 tablespoon parsley, very finely chopped
1 -2 tablespoon spring onion, very finely chopped (green and white parts)
1/2 teaspoon flaked sea salt (you'll probably need more, to taste)
7 drops Tabasco sauce (or more to taste, or use any hot sauce)
1 tablespoon lemon juice, fresh (this is to taste ( I used a good squirt)
coarse black pepper

Steps:

  • In a bowl, add all the ingredients except the pepper. About the smoked oysters: lift them from the tin with a fork when adding, and by all means use some of the canning oil too, as it adds to the flavour. If your oysters are quite large you can halve them.
  • Whisk to mix.
  • Please taste -- the soup is mild and rich, and you might want to add more lemon juice. i didn't measure, just squeezed a good squirt from half a lemon into the soup.
  • At this stage the soup can be covered and kept in the fridge overnight, which will be better for flavour.
  • To serve, heat VERY gently, or heat in a bowl in a warming oven. Do NOT boil.
  • Serve as starter portions in small ramekins, with fresh rye bread (or other) alongside.

LAZY DAY HAMBURGER SOUP

My family absolutely loves this soup! I serve it with a side of warm french bread or corn bread. It's fulfilling, hearty and easy. You can make this soup thicker by add more meat in the first step. It's up to you.

1 lb ground beef sirloin
1 lb ground hamburger meat
15 oz can pinto beans
15 oz can light red kidney beans
8 oz about 1/2 can of 15oz whole kernel corn
1 can(s) stewed tomatoes
1 can(s) mild diced tomatoes & green chilies
8 oz can tomatoes sauce
1 pkg taco seasoning mix
1 pkg ranch dressing seasoning mix
1 can(s) beef broth

Steps:

  • 1. 2 lb. of ground meat - thawed, cook in a skillet until browned. Leave the meat in bite size chunks while browning. ( I usually add chopped onions & garlic while browning, but that's optional ) Drain fat from meat and place back in pan. You can use different combinations of ground meat or all of the same kind, just as long as its 2 lb. e.g.-ground deer, lamb, sirloin, angus, and turkey. Turn on slow cooker to high- don't have a slow cooker get your big pot out.
  • 2. Ranch dressing, taco seasoning- add to the cooked meat with a little bit of water. Stir and place lid on and cook for about 10 mins. ( I just fill the empty seasoning pk up with water..roughly 1/2 -3/4 cups of water so the meat doesn't dry out)
  • 3. Red kidney beans- drained and rinsed Pinto beans- or you can sub for a can of chili beans Whole kernel corn- I like to only use 1/2 of a 15 oz can but your welcome to use the whole can with the liquid. It's up to you. Stewed tomatoes- I like to use 2 cans of this, but recipe calls for only 1. Mild dice tomatoes and green chilies- you can use hot, but it will have a little kick already with the green chilies. Tomatoes sauce Add all with the cooked seasoned meat to your slow cooker or pot. Add salt & black pepper for taste. Add 1-1 and 1/2 cups beef broth or add beef bullion to hot water. Slower cooker - high for 3 hours or low for 6 hours. Large pot stove top -bring to a boil cook for 15-20mins on high, then simmer on low with lid on for 45mins- 1 hour. Just stir and check every 15-20mins.

3/4 cup dehydrated onion
1 package frozen mixed vegetables
2 tablespoons soup mix

  • Combine all in a 5 liter pressure cooker, add water to the line.

  • Let the pressure come down naturally.

  • Grate carrot and cook with chicken in chicken broth and 4 cups water.

a bag of gumbo vegetables, fresh garlic, or okra and fresh tomatoes. (Optional: corn on the cob, break in 2 or 3 pieces.)( Gumbo vegetables and okra can be omitted are optional.) Can use just chicken and soup, and it is still good.
Spices: chili powder, basil,fresh garlic, thyme, rosemary, black pepper, and salt. (optional: Mrs. Dash).

4 C. cooked chicken, chopped
1 C. onions, diced
1 C. celery, diced
1 C. carrots, diced
1/2 C. frozen peas
4 (14oz) cans low sodium chicken broth
2 (10 3/4 oz) cans condensed cream of mushroom soup (with roasted garlic)
2 tsp fiines herbes (chervil, chives, parsley, and tarragon)
Salt to taste
Pepper to taste
2 C. egg noodles, cooked

Steps:

  • 1. Remove skin from the chicken and chop the meat 2. Put the chicken into a slow cooker with the onions, celery, carrots and peas. 3. Stir in both, mushroom soup, and herbs. Season with salt and pepper 4. Cover and cook on high for 3-4 hours or low for 8 to 9 hours 5. when soup is finished, stir in egg noodles. 6. Season to taste and serve. ENJOY!

1 c chopped celery
1/2 c chopped green pepper
1/2 c shredded carrot
1/4 c butter or margarine
1 can(s) chicken broth
2 1/2 - 3 c water
1/2 tsp dried thyme
1 box au gratin potato mix
1 lb diced polish sausage, diced ham, or browned and seasoned hamburger meat
1 can(s) evaporated milk
6 slice american cheese

Steps:

  • 1. Saute vegetables in butter until soft. Add dry potatoes, sauce mix packet, broth, and 2 1/2 cups of water. Mix well. Sauce mix will be lumpy but it always cooks out.
  • 2. Bring to a boil and simmer for about 15 minutes or until potatoes are tender.
  • 3. Add diced sausage, ham, or browned hamburger. Heat thouroughly. Stir in milk and cheese. Do not boil. Stir until cheese is melted.
  • 4. Add extra water if soup seems too thick. Adjust seasoning to taste. Enjoy!
