Steps:
- Heat grill or grill pan to medium-high.
- Fill a small skillet with about 1-inch water and bring to a boil.
- Grate the garlic onto acutting board and add a couple teaspoons salt, mash into paste with the flat of your knife.
- Add salt to boiling water and cook green beans 1 minute then drain and cool under cold running water then reserve.
- Reserve 1/5 of the pasted garlic, about 1 clove and add the rest to a shallow dish. To the garlic, add the lemon zest, fennel seed, chopped thyme, rosemary, parsley and about 1/4 to 1/3 cup extra-virgin olive oil and some black pepper. Stir with a fork to combine then add chicken pieces and coat evenly. Grill chicken 12 to 15 minutes until juices run clear.
- Bring a medium saucepan of water to a boil.
- Trim asparagus of tough ends. Add salt and the asparagus to the water and blanch for 2 minutes. Remove from the water and place into an ice water bath to cool. Once cooled, pat dry with paper towels, drizzle with a touch of extra-virgin olive oil and season with salt and pepper. Divide the asparagus into 4 piles and roll 2 layered slices of prosciutto around each pile to form bundles. Grill 7 to 8 minutes until prosciutto is crisp and spears are tender.
- Place basil and mint leaves in a food processor with the nuts. Add some salt and pepper and turn processor on. Stream in about 1/4 to 1/3 cup extra-virgin olive oil to form a thick pasty sauce. Transfer the sauce to a bowl. Stir in the reserved garlic paste and the grated cheese. Add the cooled green beans and the canned beans to the bowl and stir to combine. Adjust seasoning.
- Remove chicken from the grill and squeeze the juice of 1 of the zested lemons down over the meat while still hot.
- Serve 1 piece each chicken breast and thigh with an asparagus bundle and some bean salad alongside.

LEMON CHICKEN WITH PROSCIUTTO & FRESH HERBS
A great recipe for those who love lemons! And for when your lemon tree is laden! It sounds just so delicious. I've just found it in the November 2005 issue of the 'Australian Good Taste' magazine, where I was looking for low-fat recipes, and I'm posting it here for safe-keeping: so that I remember to make it! It's Donna Mahon's recipe. She is the Victorian finalist in the 2005 Home Cook of the Year Competition. The winner from the seven state finalists is to be announced in January. This was the recipe from the finalists' recipes that immediately grabbed my attention. Donna says it is her signature dish, the one she "always falls back on" when she's entertaining.

Steps:
- Place the chicken cutlets, bone-side down, in a large, lightly greased roasting pan.
- Peel strips of rind from the lemons, cut the lemons in half and juice. Set the juice aside.
- Place the strips of lemon rind and prosciutto between the chicken cutlets in the pan.
- Sprinkle the chicken with garlic, sage, marjoram and rosemary. Drizzle with lemon juice and season with salt and lemon pepper. Drizzle with oil and cover with plastic wrap and place in the fridge for 1 hour to allow the flavours to blend.
- Preheat the oven to 170°C/(approximately 335°F), and bake the chicken for 40 minutes or until golden brown and cooked through.
- Donna suggests serving this with mashed potato and sautéed spinach. When I make it, I'm planning to serve it with Cookgirl's I Did It My Way Creamed Spinach Recipe #116296 and my Herbed Potato Crisps Recipe #119124.

Tips:
- Choose the Right Chicken: Opt for air-chilled, free-range chicken for the best flavor and texture.
- Use Fresh Herbs: Fresh herbs like thyme, rosemary, and oregano add a vibrant flavor to the chicken.
- Don't Overcook the Chicken: Overcooked chicken becomes dry and tough. Cook it just until it reaches an internal temperature of 165°F (74°C).
- Make the Peach and Prosciutto Salad in Advance: This salad can be made up to a day ahead of time, making it perfect for busy weeknights.
- Use Ripe Peaches: Ripe peaches are sweeter and more flavorful. If your peaches are not quite ripe, let them sit at room temperature for a few days or place them in a paper bag with a ripe banana.
- Serve the Chicken and Salad Warm or Cold: This dish can be served warm or cold, making it a versatile option for any occasion.
Conclusion:
This Lemon and Herb Chicken with Peach and Prosciutto Salad is a delightful and flavorful dish that is perfect for any occasion. The combination of juicy chicken, sweet peaches, salty prosciutto, and tangy lemon herb dressing creates a symphony of flavors that will tantalize your taste buds. Whether you serve it warm or cold, this dish is sure to be a hit. So next time you're looking for a delicious and easy-to-make meal, give this recipe a try. You won't be disappointed!
