An old Finnish recipe that produces a delicate, slightly crumbly cake with a lovely, mild lemon flavour. This is the original recipe - I sometimes add 1/2 ts of lemon extract and 1 ts of vanilla for deeper flavour.

Tips:
- Choose the freshest lemon balm possible. The more fragrant the lemon balm, the better the cake will taste. If you can, use lemon balm that has been freshly picked from your garden.
- Do not over-mix the batter. Over-mixing the batter will make the cake tough. Mix the batter only until the ingredients are combined.
- Bake the cake until a toothpick inserted into the center comes out clean. This will ensure that the cake is cooked through.
- Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
- Store the cake in an airtight container at room temperature for up to 3 days. The cake can also be frozen for up to 2 months.
Conclusion:
Lemon balm cake is a delicious and refreshing cake that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its light and fluffy texture, zesty lemon flavor, and hint of mint, lemon balm cake is sure to be a hit!
