BASIL LEMON BUTTER CREAM SAUCE

Basil Lemon Butter Cream Sauce image

This is a sauce recipe that was a frequent complement to chicken and fish during my study abroad residence experience with a french family in the Loire Valley region. Cream sauces are very popular paired with white and rosé wines in this geography, and this goes well over a thinly sliced breast of chicken, or a flaky whitefish. Although the sauce itself is somewhat fattening, if used conservatively it's actually a light and refreshing compliment to poultry and fish in the summer. If you absolutely feel the need to tone down the fat, be careful as you don't want the sauce to become too thin as it won't coat as nicely. Enjoy!

1 teaspoon salt
3 turns freshly ground black pepper
1 dash Worcestershire sauce
1 dash hot pepper sauce

Provided by Valerie in Florida

Categories     Sauces

Time 15m

Yield 2 serving(s)

Number Of Ingredients 8

2 tablespoons clarified butter (you'll need about 1/2 stick of butter; directions follow)
2 tablespoons finely chopped yellow onions
2 tablespoons finely chopped garlic
4 tablespoons fresh lemon juice
2 tablespoons dry white wine
salt
pepper
2 tablespoons cold butter

Steps:

  • To clarify butter; Melt 1/2 stick of butter over low heat. When melted, remove from heat and set aside for several minutes to allow the milk solids to settle to the bottom. Skim the clear (clarified) butter from the top, and discard sediment. (This can be done ahead of time).
  • To make the sauce: Heat clarified butter, add onion and garlic, and saute until transparent. Add lemon juice and white wine, and season to taste with salt and pepper. Simmer 2-3 minutes to reduce liquid. Remove from heat and swirl in cold butter until sauce is smooth and emulsified.

Tips:

  • Use fresh ingredients: Fresh basil and lemon zest provide the best flavor for this sauce.
  • Don't overcook the butter: The butter should be melted but not browned. Overcooked butter will have a bitter taste.
  • Taste the sauce as you go: Adjust the seasonings to your liking. You may want to add more lemon juice, salt, or pepper.
  • Serve the sauce immediately: This sauce is best when served fresh. It can be reheated, but it may lose some of its flavor.

Conclusion:

Lemon basil butter sauce is a versatile and delicious sauce that can be used to enhance a variety of dishes. It is perfect for grilled or roasted chicken, fish, and vegetables. It can also be used as a pasta sauce or as a dipping sauce for bread. With its bright and herbaceous flavor, lemon basil butter sauce is sure to be a hit with your family and friends.
