2 cups nonfat milk
1 pinch salt
3 tablespoons maple syrup
½ lemon, zested
1 cup blueberries
2 teaspoons flax seed

Steps:

  • Rinse quinoa in a fine strainer with cold water to remove bitterness until water runs clear and is no longer frothy.
  • Heat milk in a saucepan over medium heat until warm, 2 to 3 minutes. Stir quinoa and salt into the milk; simmer over medium-low heat until much of the liquid has been absorbed, about 20 minutes. 2 cups unsweetened vanilla almond milk or whole milk
1/4 cup pure maple syrup
zest of 1 lemon
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1 cup quinoa
1/4 cup ground flaxseed
1 1/2 cups fresh or frozen mixed berries
1/4 cup sliced almonds

Steps:

  • Preheat oven to 375 degrees and grease an 8 x 11-inch baking dish.
  • Whisk together all wet ingredients (eggs through vanilla) in a large bowl. Add the quinoa and flax and stir.
  • Pour the mixture into the greased baking dish, spreading to evenly distribute the quinoa. Sprinkle the berries and almonds evenly on top of the mixture.

1 cup quinoa
1 1/2 tablespoons vegetable oil
2 cups water
3/4 teaspoon dried marjoram or 3/4 teaspoon oregano
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crumbled
3 tablespoons chopped parsley
2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon grated fresh lemon rind
1/4 teaspoon pepper

Steps:

  • Place the quinoa in a large bowl.
  • Fill with cold water.
  • Drain into a strainer and repeat the rinsing and draining 4 more times.
  • Over medium-high heat, heat the oil in a 2-quart saucepan.
