LAVENDER AND LEMON BISCOCHITOS
Biscochitos are the state cookie for our home state of New Mexico. They are traditionally made with anise seeds, but I substituted lavender and lemon in this biscochitos recipe. The result is intriguing and delicious! I have also made these with lemon and dried thyme and they were scrumptious. -Marla Clark, Albuquerque, New Mexico

BIZCOCHOS (MEXICAN HOLIDAY COOKIES)
Yes these are made with lard and no there is no substitute. In authentic Mexican cooking, lard, not shortening, is used. This recipe comes from Seasoned with Sun the El Paso Junior League Cookbook. A co-worker asked me for the recipe and I realized that it wasn't posted anywhere.

Steps:
- Make the cookies: Preheat oven to 350 degrees. Beat butter, sugar, vanilla, and lemon zest and juice until combined. Beat in flour and 1/2 teaspoon salt. Wrap dough in plastic wrap, and refrigerate until firm, at least 2 hours.
- Turn out dough onto a lightly floured surface, and roll out to a scant 1/4-inch thickness. Cut out about 18 cookies using 2 sizes of flower cookie cutters (one 3-inch and one 3 3/4-inch). Transfer to parchment-lined baking sheets, and refrigerate for 30 minutes.
- Bake until edges just start to brown, 14 to 18 minutes. Let cool completely.
- Decorate the cookies: Transfer each batch of tinted icing to a separate pastry bag fitted with a small round tip (you can use as many colors as desired). Pipe an outline of icing around the edges, then "flood" each cookie with more icing to cover. Immediately pipe a circle of small dots in the center of each cookie using a different-colored icing. Drag dots to outer edges using a toothpick to create thin lines. Repeat with remaining cookies and icing. Transfer cookies to parchment-lined baking sheets, and let dry completely, about 30 minutes.
- Once cookies are set, pipe a large dot in the center of each cookie using the same tinted icing as the small dots. Gently sprinkle poppy seeds around large dot. Let dry completely.
Tips:
- Use unsalted butter and bring it to room temperature before creaming with sugar. This will help the cookies spread evenly and create a more tender crumb.
- Cream the butter and sugar together until light and fluffy. This will help incorporate air into the dough, resulting in a lighter cookie.
- Gradually add the eggs one at a time, beating well after each addition. This will help prevent the cookies from curdling.
- Stir in the dry ingredients until just combined. Overmixing will result in a tough cookie.
- Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies in a preheated oven. This will help ensure that they bake evenly.
- Let the cookies cool completely before storing them in an airtight container. This will help them stay fresh and flavorful.
Conclusion:
Lemon bizcochitos are a delicious and easy-to-make cookie that is perfect for any occasion. With their light and fluffy texture, zesty lemon flavor, and delicate crumb, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give these lemon bizcochitos a try. You won't be disappointed!
