7-10 Lemons
650 g granulated sugar
500 ml water

Steps:

  • Zest 4 lemons
  • Juice lemons (you will need about 500 ml of lemon juice)
  • Add 500 ml water to a saucepan with 650g of granulated sugar
  • Stir until the sugar has dissolved
  • Bring the pan to the boil for a minute or so, until the sugar water mixture has slightly thickened
  • Add 500 ml of lemon juice and the lemon zest to the pan and stir
  • As soon as it comes back up to boiling point remove the pan from the heat and give it a good stir with a whisk
  • Allow to cool slightly then strain the mixture through a sieve into a clean bowl
  • Pour the mixture from the bowl into a jug and then into your glass bottle/container
  • Dilute 1 part lemon cordial to 3 parts of water

Many Australian backyards have a lemon tree. They're an easy fruit to grow and with minimal effort you can be rewarded with a bountiful crop each year. Any excess lemons can be squeezed and the juice frozen in ice-cube trays for later use. The cordial is from an English recipe I discovered. It is so refreshing with mineral water, and a nip of vodka if need be.

Yield MAKES 2-3 x 500ml bottles

7-10 unwaxed lemons
650g granulated sugar

Steps:

  • Scrub lemons and zest four of them. Bring a saucepan of water to the boil, add lemons and leave for 1 minute. Lemons are often quite hard and unyielding - this softens them so they give more juice when squeezed. Remove lemons and reserve lemon-infused water. Juice lemons. Put sugar, lemon zest and 500 millilitres lemon-infused water into a saucepan. Heat gently to dissolve sugar, then bring to the boil. Add 500 millilitres lemon juice and bring just to boiling point. Remove from heat and strain through a sieve into a jug. Pour immediately into hot, sterilised bottles and seal immediately with sterilised screw caps, corks or swing-top lids. Leave to cool, then store cordial in a cool, dry place or in the fridge for up to 4 months. For longer storage - up to a year - sterilise the bottles in a water bath*. To serve the cordial, mix 1 part syrup to 4 parts water. Note Another way to increase the yield of juice from citrus fruits is to roll the fruit back and forth over a work surface, pressing down firmly with the palm of your hand, for 2-3 minutes. * To sterilise jars and bottles, put them through a short dishwasher cycle, then use immediately while still warm. To sterilise in a water bath, put the glassware in a pot and fill with water, bring to a simmer and simmer for 5 minutes. Remove while warm, drain water and keep in a clean place until needed.

3/4 cup of fresh lemon juice after straining of any pulp or seeds- from approx 4 medium sized lemons
4 cups white sugar
28 grams (1 ounce) tartaric acid
5 cups boiling boiling water

  • place zest, juice, sugar and tartaric acid in a large bowl
  • pour boiling water over ingredients and stir till dissolved
  • strain
  • pour into a jug and then into a sterilised bottle with a lid
  • store in the pantry or refrigerator

This is SO much nicer than store bought cordial and with not too much effort. Everybody I know loves it when I make my own cordial. For those that have never tried home made, use the cordial sparingly as it seems strong than store bought. May be start with 1/2 inch in your glass and adjust according to your taste. I have also made this with other citrus fruits. You could use 3 oranges & 3 lemons or just use limes. Delish!

6 lemons
1 1/2-2 kg sugar
30 g tartaric
60 g citric acid
8 cups boiling water

Steps:

  • Finely grate the rind off lemons and then juice them all.
  • Put all dry ingredients and lemon juice into a saucepan or large bowl and add boiling water slowly. Mix to dissolve, cool, then bottle and seal.
  • Serve diluted with water or soda water, according to taste.
