This recipe is very easy and cool. It requires very little baking. The longer it sits, the better it gets--if you can keep from eating it!

1 cup all-purpose flour
½ cup butter, melted
1 cup ground pecans
1 (8 ounce) package cream cheese
1 cup confectioners' sugar
1 (21 ounce) can lemon pie filling
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a 7x11 inch baking dish, combine flour, melted butter and half of pecans. Spread mixture evenly and bake 25 minutes, or until golden brown. Let cool completely.
  • In medium bowl, cream together cream cheese and confectioners' sugar until smooth. Spread over cooled crust. Chill 30 minutes in refrigerator.
  • Spread lemon pie filling over chilled dessert. Spread whipped topping over lemon filling, and top with remaining pecans. Refrigerate until serving.

My mum's (mother-in-law's) recipe, which was handed down from her mum. My husband loves it so much, that he actually takes the time to make it himself.

Number Of Ingredients 8

1 cup sugar
1 teaspoon butter
1 tablespoon flour (heaping)
1 1/4 cups milk
1 lemon (juice and rind)
2 egg yolks
2 egg whites
1 pinch salt

Steps:

  • Set oven to 300F and prepare water bath.
  • Beat butter and sugar.
  • Add flour, milk, lemon juice & rind, and yolks. Beat.
  • In a separate bowl, whisk whites until stiff peaks form.
  • LIGHTLY fold whites into lemon mixture.
  • Bake in water bath for 30 minutes at 300°F.
  • Refrigerate for 2 hours or overnight.
  • (When doubling, use only 2 cups milk).

On a quest to find the recipe I used to make years ago and the DH asked to make this one from Super Food Ideas July 2008, even though I knew it wasn't IT but he really enjoyed it and thought it was great, so I am posting but will continue my quest to find IT.

150 g unsalted butter
2 teaspoons lemon rind (finely grated)
1/3 cup lemon juice
1 1/2 cups caster sugar
3/4 cup self-raising flour (sifted)
1 1/2 cups milk
4 eggs (separated)
6 teaspoons powdered sugar icing (to serve)

Steps:

  • Preheat oven to 180 C (fan forced 160 C).
  • Grease six 1 cup capcity ovenproof dishes.
  • Place butter, lemon rind, lemon juice, sugar, flour, milk and egg yolks in a bowl and whisk to combine.
  • Using an electric mixer, beat eggwhites on high speed until soft peaks form.
  • Using a metal spoon, fold in 1/4 if the eggwhite mix into the lemon mixture.
  • Gently fold in remaining eggwhite.
  • Spoon mixture into prepared dishes.
  • Place dishes in a large baking dish and pour boiling water into baking dish until halfway up the sides of the smaller dishes.
  • Bake for 25 to 30 minutes or until golden and set.
  • Dust with icing sugar mixture.

2 cups all-purpose flour
1 cup butter, softened
2 (8 ounce) packages cream cheese
1 cup white sugar
2 (3.4 ounce) packages instant lemon pudding mix
3 ½ cups milk
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine the flour and butter using a pastry cutter until a ball forms. Press into the bottom of a 9x13 inch baking dish.
  • Bake for 25 minutes in the preheated oven, or until lightly golden. Remove from oven and allow to cool completely.
  • In a medium bowl, beat the cream cheese and sugar together until smooth and well blended. Spread evenly over the cooled crust. In another bowl, whisk together the lemon pudding mix and milk for 3 to 5 minutes. Spread over the cream cheese layer. Chill until set, then top with whipped topping.
