1/4 cup hot water
3 tablespoons fresh-squeezed lemon juice (from 1 medium-to-large lemon)
3/4 cup cold water
Ice

Steps:

  • In a 16-ounce or larger glass, stir together the sugar and hot water until the sugar is dissolved.
  • Stir in the lemon juice and the cold water.
  • Fill to the top with ice and serve.

Use this recipe to make our Chopped Lemongrass Chicken Salad. This marinade may be made in advance and kept in the refrigerator for two days.

4 stalks lemongrass, tough outer leaves removed, cut into pieces
1 inch piece ginger, peeled, roughly chopped
4 cloves garlic
2 shallots, peeled and roughly chopped
2 tablespoons brown sugar
1/2 cup mirin (Japanese cooking wine)
2 tablespoons fish sauce
6 tablespoons canola oil

Steps:

  • Add lemongrass, ginger, garlic, and shallots through feed tube of a food processor with motor running. Process until very finely chopped. Add sugar, mirin, and fish sauce; process until pureed, scraping sides as needed. With motor running, slowly add oil; process until incorporated.

LEMONADE WITH LEMON GRASS AND DRIED LEMON



Lemonade With Lemon Grass And Dried Lemon image

2 cups sugar
1 stalk lemon grass, chopped
1 dried lemon (see note)
3 cups fresh lemon juice (from about 24 lemons)

Steps:

  • Combine sugar, lemon grass and dried lemon in a saucepan. Add 2 cups water, and bring mixture to a boil. Simmer 5 to 7 minutes or until dried lemon is tender. Use a spoon to squash lemon against side of pan.
  • Turn off heat, and let mixture rest for 10 minutes, then strain it into a pitcher. Add lemon juice and 6 cups cold water. Chill until thoroughly cold, at least 2 hours. Serve over ice.

This marinade is wonderful for any meat, but I use it on chicken then grill it. It's wonderful. The smell of the fish sauce is awful, but the end result is delicious.

3 stalks lemongrass, chopped, bottom white part only (yields 2/3 cup)
2 garlic cloves, sliced
1 tablespoon chili sauce (optional)
2 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons sugar
1/4 teaspoon salt
3 tablespoons soya oil (I couldn't find this, so I used olive oil)

Steps:

  • Process lemon grass, garlic and chili sauce until it turns into a fine paste.
  • Combine paste and all other ingredients and mix well.
  • Marinade is ready to use after sitting for about 1 minutes.
  • Recipe yields enough marinade for 1-2 pounds of meat.
  • You can save the tops of the lemon grass to season soups and stocks or you can steep it with your tea to make lemon tea.
  • Simply put in zip-lock bag and freeze until needed.

1 tablespoon tamarind paste
2 tablespoons kaffir lime juice
1 tablespoon palm sugar
1/2 cup very thinly sliced shallots
1/2 cup very thinly sliced ginger
1/2 cup very thinly sliced lemon grass
1/2 cup green onions
1 tablespoon or more nam pla (fish sauce)
2 kaffir lime leaves, very thinly shredded

Steps:

  • Mix tamarind paste with 1/2 cup hot water. Set aside 2 tablespoons; reserve remainder for another recipe.
  • Combine tamarind water in a bowl with all remaining ingredients. Taste, and add more fish sauce if you prefer a saltier flavor.
  • Serve over grilled fish, shrimp, octopus, beef, pork or chicken. Or mix with cooked flaked fish or pork.

10 tablespoons honey
1 teaspoon ground cinnamon

  • Pour water into a saucepan, and add the lemon zest strips. Bring to a boil over high heat. Once the water begins to boil, remove from the heat and stir in the honey, cinnamon, and lemon grass. Allow to steep for 2 minutes, then stir in lemon juice. Strain; serve hot or cold.n
