2 cups lime sherbet, thawed slightly
1 (250 g) package cream cheese
1 (12 ounce) can sweetened condensed milk (or make your own with Sweetened Condensed Milk)
1/2 cup lemon juice
1 (1 liter) container Cool Whip
lemon slices (to garnish) or lime slice (to garnish)

Steps:

  • Spread lime sherbet on the bottom of a 9 x 5 loaf pan.
  • Freeze 10 minutes.
  • Beat cream cheese and condensed milk until fluffy.
  • Add lemon juice.
  • Stir in Cool Whip.
  • Spread mixture on top of sherbet layer.

2 cups all-purpose flour
1 cup finely chopped pecans
SECOND LAYER:
2 packages (8 ounces each) cream cheese, softened
1 cup confectioners' sugar
1 cup heavy whipping cream, whipped
THIRD LAYER:
4-1/2 cups cold water, divided
2 packages (2.9 ounces each) cook-and-serve lemon pudding mix
1 cup sugar
4 egg yolks, lightly beaten
TOP LAYER:
2 cups heavy whipping cream
2 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • In a bowl, cut butter into flour until mixture resembles coarse crumbs; stir in pecans. Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 15 minutes or until lightly browned. Cool on a wire rack. , In a large bowl, combine cream cheese and confectioners' sugar until smooth. 1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1 container (8 oz) Cool Whip frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.

1 cup all-purpose flour
½ cup unsalted butter, softened
3 tablespoons brown sugar
1 cup brown sugar
1 cup sweetened flaked coconut
½ cup chopped pecans
2 large eggs
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon salt
1 (2.9 ounce) package non-instant lemon pudding mix
½ cup white sugar
2 ½ cups water, divided
2 large egg yolks, beaten
1 (3 ounce) package lime-flavored gelatin mix (such as Jell-O®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine 1 cup flour, 1/2 cup softened butter, and 3 tablespoons brown sugar in a bowl. Pat into the bottom of a 9x13-inch baking pan.
  • Bake in the preheated oven until slightly golden, 8 to 10 minutes. Remove from the oven; leave the oven on.
  • Combine 1 cup brown sugar, coconut, pecans, eggs, 3 tablespoons flour, vanilla, baking powder, and salt in a bowl and spread over baked first layer. No need to cool in between.
