BONELESS PORK LOIN CHOPS WITH ONION MARMALADE

Boneless Pork Loin Chops with Onion Marmalade image

Categories     Onion     Pork     Sauté     Quick & Easy     Winter     Gourmet

Yield Serves 2

Number Of Ingredients 7

two 1-inch-thick boneless pork loin chops (about 6 ounces each)
1/2 teaspoon dried rosemary, crumbled
1 tablespoon olive oil
1 large onion (about 3/4 pound), halved lengthwise and sliced thin crosswise
1/4 cup water
2 tablespoons balsamic vinegar
2 tablespoons red-currant jelly

Steps:

  • Trim excess fat from pork chops and sprinkle with rosemary and salt and pepper to taste. In a heavy 10-inch skillet heat oil over moderately high heat until hot but not smoking and sauté pork chops until browned on both sides, about 5 minutes. Transfer pork chops with tongs to a plate.
  • In drippings remaining in skillet sauté onion until it begins to brown. Add water, vinegar, and jelly and bring to a boil, stirring until jelly melts. Simmer mixture, covered, over moderate heat until onion is tender, about 5 minutes.
  • Return pork to skillet and cook, uncovered, turning once, until cooked through and almost all liquid is evaporated, about 5 minutes.

Tips:

  • For a tangy and flavorful marinade, use equal parts lemon juice and olive oil, along with seasonings like garlic, thyme, and rosemary.
  • To ensure the pork chops remain tender and juicy, marinate them for at least 30 minutes before cooking.
  • Sear the pork chops over medium-high heat to create a golden crust and lock in the juices.
  • Reduce the heat to medium-low and continue cooking the pork chops until they reach an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  • To make the lemon marmalade sauce, combine lemon marmalade, Dijon mustard, and chicken broth in a saucepan and simmer until thickened.
  • Serve the pork chops with the lemon marmalade sauce and garnish with fresh parsley or thyme.

Conclusion:

Lemon marmalade pork chops offer a delightful blend of sweet, tangy, and savory flavors, making them a perfect choice for a flavorful and satisfying meal. The combination of juicy pork chops, tangy lemon marmalade, and rich sauce make this dish a standout.
