Provided by Claire Robinson

Categories     condiment

Yield 2 servings

Number Of Ingredients 5

1/4 cup granulated sugar
1/4 cup freshly squeezed lemon juice, plus 2 teaspoons finely grated lemon zest
2 tablespoons chiffonade of fresh mint, plus whole leaves for garnish
1 fresh mango, sliced
1 cup fresh berries

Steps:

  • In a small saucepan over moderate heat, bring the sugar, 1/4 cup water, lemon juice and zest to a boil and cook until the sugar has dissolved and the mixture has reduced by half. Time 10m

Yield Makes about 1 cup

Number Of Ingredients 5

1 stick unsalted butter, room temperature
1 cup packed fresh mint, chopped
3/4 cup finely chopped chives
Finely grated zest of 2 lemons
1/2 teaspoon coarse salt

Steps:

  • Stir butter in a medium bowl until smooth. Mix in mint, chives, lemon zest, and salt.

Tips:

  • Choose the right lemons: Use fresh, juicy lemons for the best flavor. Meyer lemons are a great option, as they have a sweeter, less tart flavor than regular lemons.
  • Make the butter ahead of time: You can make the lemon-mint butter up to 3 days in advance. Simply store it in an airtight container in the refrigerator.
  • Use high-quality olive oil: The olive oil you use will make a big difference in the flavor of the dish. Choose a good-quality extra virgin olive oil.
  • Don't overcrowd the grill: When grilling the chicken, don't overcrowd the grill. This will prevent the chicken from cooking evenly.
  • Let the chicken rest before serving: Once the chicken is grilled, let it rest for a few minutes before serving. This will help the juices redistribute and make the chicken more tender.

Conclusion:

This lemon-mint butter BBQ chicken is a delicious and easy-to-make dish that is perfect for a summer cookout. The combination of lemon, mint, and butter creates a flavorful and aromatic marinade that infuses the chicken with flavor. The chicken is then grilled to perfection, resulting in a juicy and tender dish. Serve this chicken with your favorite sides, such as grilled vegetables, rice, or pasta.
